  1. Freezing the ricotta for stuffed shells or manicotti is frankly a good idea when freezer space is limited.. I usually do it as a frozen meal (pasta stuffed) However do Not have any open freezer space.. so freeze the filling keep the dried pasta on the shelf.. takes less space..
