Italian Pistachio Lady’s Kisses Cookies AKA Baci di Dama โœจ

These pistachio ladyโ€™s kisses are a fun and flavorful twist on the classic Italian baci di dama.

Ingredients for 30 cookies:
100 g pistachio flour (finely ground pistachios) (1 cup)
100 g all-purpose flour (3/4 cup + 1 tbsp)
100 g granulated sugar (1/2 cup)
100 g butter (1/2 cup)
1 tsp vanilla extract
Pistachio nut butter spread

Instructions:
1. Mix butter, sugar, and vanilla until smooth. Gradually add pistachio flour and all-purpose flour, mixing until a soft, fragrant dough forms.
2. Give the dough a flatter shape and cover it tightly with plastic wrap. Chill in the fridge for about 1 hour.
3. Lightly flour the counter and sprinkle some flour on top of the dough. Flatten it out with a rolling pin.
4. Cut the dough into small cubes, then roll each cube into a ball.
5. Preheat the oven to 320ยฐF (160ยฐC). Place the dough balls on a baking sheet and bake for about 15 minutes, or until lightly golden.
6. Allow the cookies to cool to room temperature.
7. Spread pistachio butter on one side of each cookie, then press another cookie on top.
8. Let the cookies set and store in an airtight container.
