Pan sear scallops and have your sauce ready before you make your spaghetti. I can tell your spaghetti sat before the sauce was ready. I’m telling you when that spaghetti is fresh out the pasta water it makes a HUGE difference. Good recipe idea tho
Alright home boy, everyone is dragging you down without giving you advice so I’ll give you advice.
First off, get fresh pasta instead of dried pasta, most grocery stores have it in the refrigerated section. It cooks through in 2 minutes, and is leagues better than dried.
Second, sear the scallops, don’t boil them. It’s much less of a taste thing and more of a texture and presentation thing. Get your pan ripping hot, drizzle in a couple tablespoons of high temp oil, wait for it to slightly smoke, then turn the heat to medium and drop your scallops in a clockwise pattern. Don’t force them to be ready to flip, they’ll release from the pan on their own when ready. Flip when ready, and toss in some butter, crushed garlic, and herbs. Baste, then pull when the second side releases. If you’re not comfortable potentially screwing them and wasting perfectly good scallops, practice with chicken breast cut into medallions.
Next, Alfredo sauce. It’s super easy to make, and even easier to fuck up. The American(easiest way) to make it: get your pan ripping hot, drizzle in some olive oil, then sauté your garlic and shallots until slightly golden. Pour in about a half cup of chicken stock, and 2 cups of heavy cream, bring to a simmer and reduce. Once reduced, add in your grated Parmesan, grate it fresh so it doesn’t have any starch on it. Sauce should be stupid thiccccc, thin it out with some of your pasta water by pulling your cooked pasta straight from the water and into the sauce.
Plate by putting your sauced pasta down first, then your scallops on top, garnish with fresh thyme and maybe some lemon zest. Good luck homie
Real Alfredo is gonna be some melted butter, add your pasta and some pasta water and some freshly grated parmesan cheese. I'd pan sear the scallops and place them on top of the pasta. Absolutely delicious.
