I took three outstanding Italian chefs, all based in Asia, to China’s most famous province for noodles to have a look and to learn.
In this three-part series, Riccardo La Perna (formerly of 8 1/2 Otto e Mezzo, Shanghai and Macau), Paolo Vitaletti (from Appia, Bangkok) and Marino D’Antonio (formerly of Giada Garden, Beijing) meet some of the noodle masters of Shanxi province.
In episode one, the chefs arrive to Taiyuan and immediately jump into the world of Shanxi noodles.

thanks everyone for all the comments. first, we are overwhelmed with how well this video is doing. i wanna address just a couple common themes you guys have mentioned.
1. background music levels. ok, got it. we can't change it on this video once it's published but we know for next ones.
2. shanxi being a rich or poor province. this is fuzzy — it's been both in its history, and its history is quite long. in fact, there were many wealthy bankers in the ming and qing dynasties, there were salt merchants before that, but i'd still argue that just because there are some rich people, it's not a rich province. anyway, my point is not to denigrate anyone's hometown and i'm not looking down on shanxi at all. this formulation — "well, we didn't have much…" — is how many people in shanxi itself explained the development of the area's food culture.

as a chef, this has been one of my favourite videos in a long time. i always find the history of the culinary arts so deeply interesting as it all derives from a rich history of culture. To mix two cultures from so far away yet so similiar in craft, the wise chinese chef couldnt have said it better. i look forward to seeing more videos like this in the future.

I haven't seen such raw, authentic food documentary of this calibre since the passing of Bourdaine. The writings. the selection of subjects and restaurants, the camera works, the translation (editing can still be improved, though) I hope this got blown and you get to create more outstanding contents.
