I know that many will throw their arms up in the air at the mention of mushrooms. However for many of us who have been (or are currently going) through hard times, mushrooms are an excellent way of making your meat go that little bit further.
Mum always included mushrooms, so I started with her recipe. During harder times I increased the vegatable quantites, particularly the mushrooms. I have since increased the proportion of meat, but haven't gone back to how it was before. Why? For the simple reason that I prefer my meaty sauce that way.

Nice recipe, though "real" Italian ragu seems to have no tomatoes in it (just tomato paste)! I usually use tomatoes too thoug. But I really want to try the version without tomatoes one day…

As an Italian I approve of this recipe. Although, try and find some guanciale instead of pancetta. For us in Adelaide bar Mercarto sells it 👌
Nice recipe Chef Jack. Long and slow like the Italians do. Yum. I make a simpler one but long and slow it cooks. The flavours are amazing. So doing it your way. I imagine it’s delicious. No garlic chef Jack? that's Anti Italian 🤣🤣🤣. i had a question from an old video of yours the The Best Caramel Slice You Need when i make the caramel sauce sometimes it's a bit too runny or not thick enough. is the solution to turn up the heat a bit to make the caramel thicker??

Can you also use canned tomatoes along with the passata or substitute the passata with the canned tomatoes?
Oooh, that looks delicious. I always use milk in mine, but add it after the wine. I will try doing it your way next time. It’s breakfast time here, but my mouth is already watering, and I can feel an extra inch on my hips by just looking at that garlic bread! 😘😋
no garlic, no stock, no herbs. THIS is the way to do it!

A few things imo, i would use thicker pieces of pancetta and i would use add the ground beef/pork/veal right when the pancetta is getting brown and get the ground meat nice and brown aswell because without that step youre really missing out on an insane amount of flavor. The milk is a great step btw, makes the entire sauce come together in a strange but great way.
Anyway, everyone should know how to make some variation of bolognese, its an incredibly easy dish that isnt to time consuming (at least in active cooking time) and its easy to make a lot of and store, for people that dont like to or dont have the time to cook a lot its literally perfect.
