your cacio e pepe is not using the proper type of pepper, you certainly do not want a regular black pepper, sadge, 6/10 for me.

Bummer. Not only is there no guanciale (sp?) or any of these cheeses available where I am but I'm also very sensitive to black pepper. Oh well, it was worth a shot.

Cacio e pepe is definitely the hardest pasta recipe out of all the classic pasta recipes. Way harder than carbonara. The first couple of times i tried to do it, it took me about 4 or 5 failed attempts before I got something remotely similar to a cream. Temperature is really a thing in this and it's too hard to control, cause it's gonna depend even on the type of cookware you use (not every pan heats up and cools down at the same speed). So, if the timing is not right, it's really easy to ruin it.
This cacio e pepe Guga made is really impresive. The cream is so thick and silky you would think he just used it out of a box.
That douche is one of those guys that cost you 15 thousand in cash every year because they never give review 9 and say… There is always room for improvement…. But when you call them about it they have no idea on how the experience can be better… Personality I think these people belong under a fire pit…

Traditions die hard, basil parsley, locatelli Romano is a superior Romano cheese. Pink white green black peppercorn, makes a huge difference.
