Creamy hummus, tasty sauteed mushrooms, and al dente rigatoni make a quick, wholesome, nutritious hummus pasta for a fantastic weeknight dinner.

INGREDIENTS
12 ounces (340 grams) pasta, we use rigatoni
1 pound (450 grams) mushrooms
1 tablespoon (15 grams) extra virgin olive oil
1 teaspoon (6 grams) salt
⅛ teaspoon black pepper
1 clove garlic grated
2 tablespoons parsley chopped
1 heaping cup (260 grams) of hummus

  1. That’s a bizarre recipe tbh. Just cut up a buncha veggies and eat em with hummus and tzatziki haha

  2. Looks beautiful as is. I might try adding a few dried drained tomatoes in oil just for another pop of color and flavor.
