In the U.S I never order aldredo, cream is not authentic. This is Americanized, inauthentic version of alfredo. This guy annoys me because his boy in the video off to the side told him It's Americanized and he pushed it was the Italian version. I don't lkke egomaniacs cooking my food. 😂
One of my favourite dishes EVER contained chicken and pasta and it came from an ”Italian restaurant” called Casa Mia in Malmö, Sweden in the later half of the 2010’s.
Key ingredients included basil, garlic, chopped sun-dried tomatoes, white wine (I almost wrote ’crime’), zucchini, parmigiano-reggiano and taleggio. My friend and I kept the recipe alive through the years, mainly by changing fusilli to tagliatelle.
That’s not the point.
The point is that it’s fucking AMAZING, not traditional Italian cooking (If you say so) and it has no name. I can’t recall the name they dared to print of the damned menu at that point in time.

This guy’s food is completely disgusting 🤢You seem to be the only person in the world who understands when to add garlic and how much. So many American “authentic” Italian restaurants are swimming in cream and garlic. I cry to you from the depths of burned garlic and gallons of cream! Save us!!!

Call me a bit nutty:
When I make shrimp alfredo, I mix some of the butter I used to cook the shrimp for the alfredo sauce.
Al dente the pasta (De Cecco Linguine), drain the big pot (after getting a mug of pasta water) add the shrimp and butter in, add the parmigiano reggiano in, stir stir stir, toss toss toss, add pasta water until sauce is satisfactorily thick.
Then add more ground black pepper for heat.
Would that be considered "shrimp alfredo e pepe" then?
I am watching this eating my spaghetti with pesto and 3 years aged parmiggiano I got at the market recently. 😅

Typical loud american-italian wannabe chef who think he knows everything, but can't even cook pasta.
Burns the garlic, uses pre-cooked chicken (seriously, wtf…), keeps stirring the pan without actually flipping the food (it just slides back and forth), puts cheese on shrimp (lol!) actual pasta looks horrbile, filthy-ass kitchen, loud mouth…

Vincenzo, please review some dishes by Food Wishes/Chef John sometime? He recently came up with a carbonara recipe. And he has many Italian recipes. I imagine you might like his creativity a lot, but find some of it infuriating! Anyway, he's a very interesting chef and there are many years of his videos for you to find something fun to talk about. He was one of the first food chefs I avidly followed.

That's the most dead pasta I've seen and he is a chef not some youtube wannbe. And then he said it's better than the original from weirdos and others don't know how to cook. Maybe one of the worst videos you reacted to just because of him insulting others while showing this food I wouldn't even give to my enemies. At least you stayed chill with the confetti.
Sadly this is common outside of Italy were they made there recipes to fit with the locals of the country similar with Indian, Chinese etc etc. then these recipes are passed down as traditional

i think the main problem here is the fact that Americans call it "Italian" food.. what this is actually is "Italian American" food, specifically from NYC area. none of it is traditional Italian food and they dont bother to make the distinction. in "Italian American" cuisine, garlic is a major component. Hey Vin, isn't Alfredo mostly associated with America? I never heard of any kind of "Alfredo" from Italy before. so who is the authority on whether it has garlic or not?

That’s an Olive Garden “chef” & that kitchen looks unorganized and sloppy. He doesn’t have anything ready & he may have served some time and recently got out, so he seems somewhat unhinged. This may be a Restaurant Impossible restaurant lol

I have my own butchered version of "alfredo". It's not Alfred and it's not with pasta. 😂
Chicken breast cut in bite size pieces,salt,peper and dash of chilli. Fried on clarified butter. Take the meat out of the pan when done. Onion diced half the size you would normally do for sauce like Bolognese,fried in the same pan adding just a bit more of clarified butter,cook untill it's golden,just before finishing press in a bit of garlic. Add cream and simmer for few minutes,add salt to taste. Put the stove to the lowest flame so it stops simmering and add grana padano (50g of cheese for 500g of cooking cream) stir untill it melts in the sauce. Put the chicken in to the sauce and serve it with gnocchi.
Yeah no thanks that is a huge serving as well.
