⭐️ This is the original recipe for garlic and oil pasta, a delicious Italian meal also known as spaghetti aglio e olio.

We’ll show you how to make it to perfection in under 15 minutes, with simple ingredients.

⭐️ Ingredients
11 ounces spaghetti
3 cloves garlic
½ tablespoon red pepper flakes or 1 fresh red chili finely chopped
⅓ cup olive oil extra virgin
2 handfuls flat-leaf parsley finely chopped
1 gallon water to cook the pasta
2 tablespoons coarse sea salt for the pasta water

  1. There are techniques to make it super creamy: my suggestion is to add the parsley only at the end if you want to use it, and cook the pasta only for 4 minutes in the boiling water, the rest of the cooking process in the sauce adding pasta water as needed. The starch will be released in the sauce making it super creamy and the pasta will absorb more flavors

  2. I don’t understand how the world thinks that al dente pasta is good. Everybody I talk to likes their pasta cooked perfectly. They like it cooked well not mushy not hard not chewy. They like it just. When pasta is al dente undercooked.

  3. No one here in Italy chops the garlic so small (cos if you burn it you ruin the taste of the oil) and we use maximum a couple of twigs of parsley not that whole bush you used (parsley in big amount is toxic).

  4. I do the exact same thing but I just stick to my nonna’s recipe where she also uses the parsley stems. She sautéed them in the oil along with the garlic and chili for extra aroma and took the stems out before tossing the pasta in with the rest; parsley and pasta water. She also added some finely grated Pecorino Romano and mixed in with the pasta water for extra creaminess ❤
