This is our go-to basic pasta recipe – it’s only flour, eggs, olive oil and sea salt – and you don’t even need a fancy pasta machine to make it! Sarah first learnt this recipe at an Italian cooking class over 10 years ago! Since then, it’s lived as a note in her phone that she’s adapted over time.. until now!

You will need:
2 cups plain flour / all purpose flour Baker’s or 00 flour is best, plus extra for rolling out / 250 g / 8.81 oz
3 eggs extra large size / 59 g / 2.08 oz each
2 tbsp olive oil / 30 ml / 1.01 fl oz
1/2 tsp salt
Watch the video to see the full method in action. You can cook fresh your pasta straight away OR freeze for later.
To freeze, lay out the strands individually on your benchtop to dry a little (around 10 minutes) then gather into portions, twirl into a nest and pop on a tray to pre-freeze for an hour before transferring to an air-tight container in the freezer. Once you’re ready to cook, drop the nests straight into boiling water. It may take an extra minute or two to cook (not usually longer than 5 minutes).
