We kick things off in beautiful Sardinia at Agriturismo Testone, where we discover the incredibly rare Su filindeu pasta, made by one of only three people in the world. Paired with local Pecorino cheese, pure olive oil, and Sardinian wine, it’s a feast for the senses! We’ll also dive into the rustic flavors of underground-cooked pork, savory lamb, and a delicious Sardinian dessert drizzled with honey.

Next, brace yourself for the bold experience of Casu Marzu, Sardinia’s infamous maggot-infested cheese, along with ravioli filled with goat ham and wild pork prosciutto.

Our adventure continues in Florence at Cibrèo, where I’ll introduce you to unique dishes like stuffed chicken neck, rabbit liver, and truffle-topped pasta. Then, we head to Tuscany’s Podere Belvedere for a rare treat: horse meat steak, along with a variety of wild meats, all set against the breathtaking Tuscan landscape.

Finally, we explore Naples’ rich culinary heritage, starting at Antica Pizzeria Port’Alba, the birthplace of pizza. We’ll indulge in exotic cow tripe and trotters before trying the creative pies at Pizzeria Concettina ai Tre Santi, where tradition meets innovation.
