This Vegetable Lasagna Roll ups recipe is easy to make than Classic Lasagna, but gives the same cheesy, saucy Italian flavors and incredible taste.
Ingredients
Lasagna – 12 sheets
Olive oil – 2 tbsps
Garlic – 2 cloves minced
Italian seasoning – 1 tbsp
Onion – 1 small
Capsicum – 1 small
Mushrooms – 10-12 Nos
Spinach – a bunch
Salt – 1 tbsp
Pepper – 1 tbsp
Sour cream – 2 cups (16 oz container)
Mozzarella cheese – 2 cups
Marinara sauce (Red pasta sauce) – 2 cups
Instructions
1. In a large pot, bring water to boil with little salt, olive oil and add lasagna sheets. Cook for 8 minutes stirring occasionally. Drain it and place it on parchment paper for cooling.
2. In a large pan, add a tbsp of Olive oil and saute garlic and Italian seasoning. Add chopped onions, capsicum, mushrooms and cook it for 5 mins. Add chopped Spinach, Salt, Pepper, mix it, cook for a minute and turn off the stove, let it cool.
3. In a large mixing bowl, add sour cream, sauteed vegetable mix, 1 cup of mozzarella cheese, mix it and the cheese filling is ready.
Baking
1. Preheat oven to 350°F or 180°C.
2. In a large baking pan, layer the bottom with the marinara sauce (red pasta sauce). i am using store bought pasta sauce, you can make the sauce at home by pureeing tomato, garlic, basil, oregano, salt and pepper.
3. Start making lasagna roll ups by placing the cheese filling on the lasagna sheet and rolling it slowly.
4. Arrange the lasagna roll ups on top of the marinara sauce in the baking pan.
5. After making all the lasagna rolls, pour some marinara sauce on top and bake it covered with aluminum foil for 15 minutes.
6. Add the mozzarella cheese and Bake it for another 15 minutes.
7. If you want the cheese to get brown, broil it uncovered for 2-3 minutes.
8. Serve it hot and i am sure the pan will be empty in minutes !!
Notes:
1. Cottage cheese will be a great replacement for sour cream in this recipe, if you are looking for low fat options.
2. Vegetables like eggplant, zucchini, carrots, broccoli can also be used in this recipe.
3. Any combination of cheeses like Parmesan cheese, Cheddar cheese or other types can be used in the cheese filling.
4. These can be made ahead and stored in the freezer which makes it perfect for guests or weeknight meals.
