Tomato Egg
Ingredients
* 4 eggs
* Salt to taste
* Neutral oil
* 2 scallions(sliced)
* 3-4 tomatoes(cut into chunks)
* 2 tbsp water
* 1 tsp soy sauce
* 2 tsp oyster sauce
* 2 tsp sugar
* 2 tbsp ketchup
* 1/4 tsp white pepper
* 1/4 tsp msg
* 1 tsp sesame oil
Instructions
1. Prep ingredients by slicing scallions and cutting tomatoes into chunks.
2. Whisk eggs and season with a pinch of salt.
3. Heat 3 tbsp of oil in a wok on medium high heat. Pour eggs and scramble and once the eggs are set but are still slightly runny, set it aside(30-45 seconds).
4. Add 2 tbsp oil to the same wok and sauté the white portion of scallions(30 seconds).
5. Once fragrant, add the tomatoes and a splash of water.
6. Let that simmer and once the tomatoes become soft and release their juices, add soy sauce, oyster sauce, sugar, ketchup, white pepper, and msg.
7. Let that simmer and once thickened, incorporate the scrambled eggs.
8. Finish with a little sesame oil and garnish with the green portion of scallions.

    WHY

    You know this is breakfast in almost all latin america? Fry your tomatoes, add pepper and salt, once the tomatos are soft add the eggs. There. Done. Smh

  3. Mum makes this but uses fish sauce rather than tomato sauce and she adds white pepper and garlic in it too.

  4. this is a great recipe even for someone like me who doesn’t like tomatoes. i also found out that if your seriously short on time another great way to make this is to add marinara sauce to some scrambled eggs with the seasonings. not quite as good as fresh tomatoes but you don’t have to wait for the tomatoes to cook down and it’s still very good 😅

  6. Omg, finally I know how to make this myself! I had this almost every day at the hotel while working in Qingdao. Sometimes they'd switch out the tomatoes for leek. Both versions mighty delicious!

  7. Hey, i used to make this all the time. My motivation? I was high as hell, and it turned out delicious. I grow tomatoes so i wanted to use em somehow other than sliced up.
