Ingredients:

(4 Servings)

200 gr / 7 Oz stracciatella cheese
400 gr / 14 Oz spaghetti
1 cucchiaio di concentrato di pomodoro /1 Tbs Tomato concentrate
1,5 Lt acqua / 50 fl oz water
0,5 Lt passata di pomodoro / 17 fl oz tomato sauce
1 spicchio d’aglio / 1 clove of garlic
250 ml olio EVO / fl oz Extravirgin oil
salt, chilli pepper (fresh or dried)

1 In a pot put water, tomato concentrate, tomato sauce and salt …bring to a boil
2 In a pan sauté minced garlic, oil, chili pepper and 2 tbs of tomato broth
3 Add raw spaghetti
4 Lightly toast the spaghetti in the pan then add 1 ladle of tomato broth
5 Add a ladle of broth each time the spaghetti have absorbed all the liquid part and are starting to stick
6 Repeat this process until the spaghetti are cooked (follow the cooking time indicated on the pasta package)
7 Plate and add the stracciatella cheese
8 for a vegan alternative drizzle with oil
