  2. You must understand he is making it for indian taste buds and not purely authentic Italian tastebuds…. So what might ruin the taste for you can actually work amazing for others

  3. I have doubt, where there veganism in India. We have tons of vegetarian people which means won't eat meat and eggs only. We consume milk and all dairy products. We are not fucking vegans 🤐🤐

  4. He is adding sugar and vinegar to give the marinara sauce a bit more taste similar to tomato ketchup/sauce. Indians love the taste of tomato ketchup/sauce.

    When I make the marinara sauce, I don't add sugar or vinegar.

  5. @Vincenzo's Plate Since he used Indian Tomatoes which are more tart and less sweet than San Marzano he added Vinegar and Sugar to the Tomato Sauce.

  6. I'm a tramp (homeless guy) and have made multiple pizzas without an oven.

    I find for best results two frying pans. The smaller one on the bottom, the larger one upturned over the top to allow in and trap, to some extent, the hot air over top.

Just a rant from me… Have lots of pizzerias here where I live (in a small Swedish town)… Most are pretty good (no, not like an Italian pizza in Italy… although I have only been in northern Italy 5-6 times) I really like the "Swedish" style pizzas sort of, most are done with immigrants style (I guess, Turkey, Iran, Irak, Balkan and so on and on)… But in Italy everything is just a bit better… better bread, better tomatoes, better tasting oregano/basilika and olive oil so on and on… probably eaten +50 pizzas in different places around northern Italy and it ranges from best thing I ever eaten to incredibly good never ever had a "bad" pizza (in Sweden yes, you can have a bad tasting pizza… there lots of them)… anyway… here is the strange thing…

    Neapolitan pizza is just awesome! love it (in Italy ofc)… In my little "town" they opened up a Neapolitan style pizzeria, and I was the first one there… and it tasted horrible… everything was horrible… I thought… sure the wood oven is not "dialed" in yet… the ingredients are not dialed in yet and so on and on… the people/owner was from Italy (but I doubt it actually).. So I went again 4-5 months later… and nope… still horrible (if it started a 1 star, maybe 1.5 4-5 months later but that was it)…

    My homemade pizzas was tastier for sure…

    Anyway… Italian (for me northern Italy) is just heaven for pizzas especially in small towns! Have had pizzas in lots of places in Europe… but Italy is the place for them for sure…
    Why is this then? I guess the produce is just that much better tasting… the herbs tastes better, the tomatoes just tastes better and the yeast for making the dough just tastes better and the wood firing for baking them just smells better… I don't know… It's just better…

    I guess Indian recipies also is better in the region of India that they are "invented" also because they made it from the spices, and the produce that they had…

  8. Now Indians usually are used to sharp flavours, more chillies & spice and using a mix of too many ingredients in almost all of their cuisine. This holds true for both North Indian cuisine & coastal South Indian cuisine. Chef Ranveer customises everything for an Indian pallet. Indians change everything from sandwiches, pizza, burger etc to their taste. So there’s no point commenting or comparing authenticity of a recipe. Authentic European or western recipes would utterly be disliked by almost every authentic Indian. Also Indians don’t comprehend alien herbs like rosemary, basil, oregano. Here people are used to a variety of local spices like cloves & cardamom. Only thing which Indians can relate to or find yummy is an authentic tomato ketchup.

  9. There is real reason for using both Baking powder and soda. Check out Alton Brown from good eats for a really nice explanation. Basically, it's to make sure there is enough leavening at different phases of cooking.

  10. So he's mixing yogurt but not yeast? Yogurt is full of life there. How come sallowing bacteria is fine, but not yeast? He's using ingredients that are available in local Indian stores. Yeast is not easily accessible because it has not been used in India cuisines.

  11. Indian pizza is not pizza. It's an invention by tge local shops who didn't have access to pizza ovens. Since it's already a thing the chef is making it.

  12. A good pizza sauce is ridiculously simple. San marzano tomatoes, and a bit of sea salt. Good quality tomatoes will speak for themselves in the final result.

  13. Ngl indian version of other cuisine is always better than original because in India people have complex taste profile. I have had an authentic pizza in good 5 star restaurant but i found it bland. Only herbs for flavour but in india every curry has more than 5 spice powders that are used to flavour and season the food. Ik people in italy must be mad but we don't like pineapple on pizza 😂. We just want some more spice in pasta or pizza. I like my spicy version of pasta where I add chilly powder, turmeric, ground coriander seeds powder, little bit of garam masala etc… we cant help. We just hate bland food. The pasta which is authentic and is loved the way it should be is pasta in white sauce.

Food styles of Italy vastly differs from that of india and thus, the different amount of demand in market, like cheese is almost not used in daily cooking and thus low in demand (compared to other ingredients) and thus, expensive. Same goes for many ingredients whether it be toppings, type of cheese, tools, cookware, etc.
    Something similar goes for Ovens as well, it very uncommon and expensive. most people don't have much use for it other than to cook some international cuisine which is occasional for which most prefer to order it than do it themselves.
    Something similar goes for pressure cooker in west, in india every household has one, but in west it is uncommon and foreign but it is useful.
    So, we improvise according to circumstances.

    I understand that there's difference i feel this is disrespect to chef ranveer
    He is teaching indian family to make things easy and cheap chef ranveer never said its the most authentic way to make pizza 🍕 come visit us i will show you so many pizza version and you will love it in india

  16. He's using baking powder and soda. Dough can not rise before cooking … it's not sourdough.
