Rigatoni Bolognese combined with Dan Dan Noodles? Let’s see how this goes… RECIPE BELOW⬇️
I’m half Italian and half Chinese… two of the greatest cuisines on earth! In this series, I’m taking classic dishes from each culture and mashing them up to create something totally new. Will it work? I don’t know. But I’m hoping this experimental cooking series will inspire you to take some risks in your cooking, too. This is Ciao Chow! (Get it?)
0:00 – Meet My New Video Series “Ciao Chow!”
0:43 – Prep ingredients.
0:54 – Pop Onion, Celery, and Carrots into a food processor to create your Sofrito. Mince if you don’t have a food processor.
2:10 – Cover the bottom of a wok with Olive Oil, add your Sofrito and Red Wine, cook on medium to high heat. Use a large pan if you don’t have a wok.
2:45 – Add Beef and Pork to your wok, lightly salt.
3:05 – Boil lightly salted water in a medium sized pot then add Rigatoni.
3:16 – Add about 2 tablespoons of Soy Sauce and Hoisin Sauce + 1 tablespoon of Five Spice to your wok.
3:50 – Chop Mustard Greens and add to wok.
4:30 – Add about 2 tablespoons of Chinese Cooking Wine and Sesame Paste to wok.
4:50 – Add 2 pinches of Peppercorn to wok.
5:00 – Chop Scallion to prep for garnishing.
5:05 – Add cooked Rigatoni to wok, followed by a knob of Butter.
5:24 – Add 1 ladle of pasta water to wok.
5:49 – Top half with Parmesan and half with Scallion and Chili Crunch then pick your favorite, the Italian side or the Chinese side!? ENJOY!

So, I’m Italian (1st gen) and my wife is Chinese (1st gen) and our kids have grown up on both cuisines… thus, I’d recommend you do a Risotto Chinese style: ginger, sesame oil, etc with a nice risotto texture.
Lions Head straight up could go with a pasta too.
