A new series I am launching in 2020 is Jason’s Kitchen, where I’ll be sharing some recipes and videos of my kitchen creations. This first one is an Italian Brekkie Bowl concocted with golden potatoes, prosciutto, onions, green peppers, baby Bella mushrooms, sundried tomatoes, mozzarella, ricotta, poached eggs, and some secret ingredients.

Check out the recipe below:
⁃Heat up pan with olive oil and butter — I used truffle olive oil and truffle butter
⁃Chop 1 golden Yukon potato
⁃1/4 – 1/3 cup Butternut Squash
⁃Chop 1/2 onion
⁃Chop 1/2 green pepper
⁃Add salt — I used pink Himalayan salt and some truffle salt — pepper and basil
⁃3-5 Baby Bella mushrooms
⁃Dice 5 cloves of garlic
⁃Sauteè for like 10-15 minutes
⁃Add sun-dried tomatoes
⁃Add prosciutto
⁃Add 1/4 – 1/3 cup of mozzarella
⁃1 teaspoon sun-dried tomato paste
⁃Mix it all together and let it sit untill potatoes and butternut squash are soft
⁃Cut up bread with olive oil on both sides — fry in pan until hot
⁃Add 2 eggs to boiling water to poach
⁃Mix ricotta with some sun-dried tomato paste
⁃Put in a bowl!!
