I am relatively new to pasta making. I originally dried them laying flat on the table but they curled really bad. This time I dried them while they hung, but they still curled. Some even broke in half and fell off? What could I be doing wrong?

I used:
200g semolina flour
100g water
40g sourdough starter (AP Flour)
2g salt

    It’s normal to see that when you dry pasta. How long did you dry it?

    Is one side of the pasta getting direct sunlight? Curling can sometimes be the result of one side drying faster than the other too.
