INGREDIENTS
FOR THE VINAIGRETTE
1/2 cup (110g) extra virgin olive oil
1/2 cup (120g) red wine vinegar
1 tablespoon (13g) honey
1 1/2 teaspoons Dijon mustard
1/4 cup minced parsley
salt and pepper – to taste
FOR THE SALAD
3 pounds (1362g) red potatoes – cut into 1 1/2-inch cubes
3/4 pound (340g) green beans – stems removed and cut into 3-inch pieces
1 cup (100g) thinly sliced red onion
12 ounces cherry tomatoes – halved
1/4 packed cup basil leaves – hand torn

  1. If you grew up in an Italian-American household you'll probably recognize this classic. Often, it's made even simpler and tomatoes and onions are omitted. The ingredient amounts (also in grams) are right in the description and the print recipe is linked there as well.   2. My family made this summer salad. We did not use tomatoes but instead added black olives, rinsed capers, chopped anchovies, and/or hard boiled egg.

  14. My parents were both born in Italy so I grew up with the Italian version. My mother boiled the potatoes and green beans in salted water and it was dressed in just olive oil and parsley. That said, I made your version last night and it was delicious.

Used an immersion blender because the vinaigrette just wouldn't come together, otherwise exactly as you did in the video! Thank you 🙂

  22. Nice alternative to the mayo-bomb typical versions of potato salad. I must say, I was not expecting to see honey in this version. Looks terrific! Please consider this a 'vote' for more non-mayo salads

  24. James, did you work in Italian or Jewish-style delis? If the latter, I would love a chicken liver show that includes a chopped liver recipe. Folks are liver-phobic but chicken livers are a wonderful bargain and filled with iron. Thanks.
