I’m so excited to introduce the #meatlessmonday series to my channel. I will be covering a variety of dishes, and vegan recipes. Using “meatless” dupes, alkaline recipes, plant based … most importantly SOY free 🙂

What you’ll need
Beyond Meat Italian Sausage
Tomato Sauce
Cherry Tomatos
Bell Pepper
Red Onion
Garlic
Pasta (YOUR CHOICE) I used Chickapea Penne

Seasonings:
Avocado Oil
Cayenne
Cumin
Salt and Pepper
Oregano
Agave
Basil

1. Start off by bringing water to a boil then add pasta of your choice.
2. In a sauce pot, add a tbsp of avocado oil and sauté garlic until they become aromatic/ translucent. Go ahead and add white onions (Optional) I didn’t have any in my fridge so I skipped this step. Once you add the Tomato Sauce of your choice I would go ahead and add a dash of oregano, salt + pepper to taste, 2 tbs of agave or honey to add sweetness to your sauce. If you like a chunkier sauce I would add chopped tomatoes for extra texture.
3. In a pan, add a tbsp of Avocado oil let that heat up and add your bell peppers and red onion. Sauté until onions are translucent then remove from pan and set aside.
4. In the same pan, add a tsp of Avocado oil and your Beyond Meat Italian Sausage. I like to spice mine up a bit by adding oregano, salt + pepper, cayenne and cumin to taste. Cook up to desired texture, I like mine a bit crunchy, so about 4 minutes on each side medium/high heat. Once they are ready to flip on the opposite side add peppers and onions back in.
5. **Optional** Preheat oven to 350, layer cooked pasta, sauce, and sausage and bake for about 5/7 minutes to help bring all the flavors together. If you’d like this is the perfect opportunity to add any vegan cheese you desire.
6. Remove from oven and ENJOY 🙂
