I’m born and currently living in Rome and even though I, painfully, have to say that this particular gricia in the picture isn’t that much inviting (too much pepper, maybe too few pecorino cheese, there isn’t the majestic cream that cheese + guanciale grease create when mixing together), I 100% agree with you
