PASTA WITH ITALIAN SAUSAGE
1 1/2 cup tomato sauce
1 tsp dill
1 tsp thyme
3-4 bay leaves
1/2 tsp basil
2 carrots sliced
5-6 cherry tomatoes, sliced
2 zucchini, cut into small pieces
4-5 mushrooms, cut into quarters
2 vegan sausages, sliced diagonally into 1″ slices
1 cup un-cooked pasta, cooked al dente
1 handful parsley, chopped
1/4 ea. red, orange, and yellow bell pepper, cut into 1″ pieces
3-4 mushrooms, cut into quarters
1 tsp rosemary
Pour tomato sauce into a shallow pan, add in herbs and carrots, and simmer to reduce over low heat for 10-15 minutes, until carrots soften. Add in cherry tomatoes, zucchini, and mushrooms, and simmer for 10 minutes. Add sausages to sauce and turn off the heat.
Add parsley, peppers, mushrooms, and rosemary to pan and fry over medium heat for 10 minutes.
Combine sauce with pasta and peppers. Serve hot.
