Risotto alla Milanese
Ingredients: Arborio rice, saffron, butter, Parmesan cheese, white wine, chicken broth, onion.
Recipe: Sauté finely chopped onion in butter until translucent, add rice and toast for a few minutes. Deglaze with white wine, then gradually add warm chicken broth, stirring constantly. Add saffron infused in a bit of broth. Finish with butter and Parmesan cheese.

Ossobuco
Ingredients: Veal shanks, flour, olive oil, carrots, celery, onion, white wine, beef broth, tomatoes, garlic, lemon zest, parsley.
Recipe: Dredge veal shanks in flour and brown in olive oil. Sauté chopped carrots, celery, and onion. Deglaze with white wine, then add tomatoes and broth. Simmer until meat is tender. Serve with gremolata (a mix of garlic, lemon zest, and parsley).

Pasta Carbonara
Ingredients: Spaghetti, eggs, Pecorino Romano cheese, guanciale (or pancetta), black pepper.
Recipe: Cook spaghetti. Sauté guanciale until crispy. In a bowl, beat eggs and mix with grated cheese. Combine hot pasta with guanciale, then quickly mix in the egg-cheese mixture off the heat to create a creamy sauce. Season with black pepper.

Porchetta
Ingredients: Pork loin, pork belly, garlic, rosemary, fennel seeds, salt, pepper, olive oil.
Recipe: Season pork loin with minced garlic, chopped rosemary, fennel seeds, salt, and pepper. Roll pork belly around the loin, tie with kitchen string. Roast until skin is crispy and meat is tender.

Pizza Margherita
Ingredients: Pizza dough, San Marzano tomatoes, fresh mozzarella, basil, olive oil, salt.
Recipe: Spread tomato sauce on rolled out dough, top with sliced mozzarella and basil leaves. Drizzle with olive oil and sprinkle with salt. Bake in a hot oven until crust is golden and cheese is bubbly.

Parmigiana di Melanzane (Eggplant Parmesan)
Ingredients: Eggplant, flour, eggs, tomato sauce, mozzarella, Parmesan cheese, basil, olive oil.
Recipe: Slice and salt eggplant to remove bitterness. Dredge in flour, dip in beaten eggs, and fry until golden. Layer fried eggplant with tomato sauce, mozzarella, and Parmesan. Bake until bubbly and golden.

Cannoli
Ingredients: Ricotta cheese, sugar, vanilla extract, cinnamon, chocolate chips, candied fruit, cannoli shells.
Recipe: Mix ricotta with sugar, vanilla, cinnamon, chocolate chips, and candied fruit. Fill cannoli shells with mixture just before serving to keep shells crisp.

Pane Carasau (Sardinian Flatbread)
Ingredients: Semolina flour, water, yeast, salt.
Recipe: Mix flour, yeast, salt, and water to form a dough. Let rise, then roll out into thin rounds. Bake until crisp and golden.
