yeah I think no podcast been earlier the N except like I could see Chaz paleri doing a 9:30 podcast how did worth it but how did this happen just my flight is this a flight landed at 6:30 so it was like what are we going to do we’re going to go I mean can’t check in till 3: let’s get her done I told music studio and I have the kids this weekend I never do shows when I have the kids this first time so I was like you know what we’ll pump it out early take him to work day take him to work day alandra’s in the other room Anton’s executive producer today amazing amazing yeah what happened was he told me like he has his book coming out which listen this guy he is one of the biggest Italian-American food content creators I want to say SL but now you’re really like putting your talents on paper you know like you’re yeah I mean dude you got to make it physical at this point with with how much we just stare at our phones exactly got to put something in your hand and and something to promote like go to different cities with something I always see you in different places you know like we bumped into each other in Milan we we’ll get into that yeah no it’s important man I mean I think [ __ ] there’s there’s so much to talk about when it comes to just yeah the reason like behind it the details the for [ __ ] sake the book’s called Italian American you know and like the fact that that’s even like allowed like that that I could even name it that was pretty cool you know that’s awesome that’s you anytime somebody searches anything Italian American right yeah UCP right there and everybody when I think they think of him they think Italian American But to answer your question fake Italian we’re going to challenge his Italian again I got I got some I I got a lot more I got a lot more in my book I know I know I’ve been least seven times our last he’s brushed up a lot but to answer your question I think what happened was I was in Rome and he was like coming to Rome in two days or something and he was like how long are you in town I’m like I’m leaving tomorrow then he said I’m coming to New York these days I have a book coming out whatever and I I guess we kind of just saw this was like the perfect day you’re only in town for like three days right uh a little bit yeah it’s just we’re I’m doing a book tour so I’ve got these signings so it’s kind of busy really busy so tell us a little bit about how the book came to be like the idea behind it how it started what made you want to do it yeah I mean the the cool the coolest part about the book is the fact that it’s legitimately just full-blown it’s not it’s not a the Italian amican is the why the why I have it slash Italian americ is because there’s authentic Italian recipes and Italian-American recipes and that’s how it split up so it’s you can see the like on every recipe there’s a flag and the flag you know this is spaghetti Alano and it’s got an Italian flag because it’s more authentic Italian than American Italian but then there’s other recipes like so like random example let’s see spaghetti like spaghetti and uh meatballs is it American FL spaghet meatballs absolutely American don’t give it half even this like I put a lobster ravioli it’s got an American flag there it’s just it’s American if it’s Americanized that it gets the position um but that’s smart that you did that too cuz you’re going to get the people that’s like oh it was a random it was a random idea and I really liked it and they the Publishing Company liked it too they were like yeah it’s cool it got an indicator on every recipe I put a QR code on every recipe kind of like a little video of me talking about the recipe for every single one um but I mean the inspiration behind it is really just like I I look at it as like a One-Stop shop for all the re like you could name probably five and most likely all five of those are going to be in there amazing um whether it’s authentic Italian like a classic dish or if it’s an Italian American classic dish you made every dish in that book yeah and it’s I mean there there’s some that I threw in that are more like family recipes so some that I’ve kind of brought from my dad from my grandma from my noas on both sides and uh my mom has like some of my mom’s recipes in there and then Originals that I’ve come up with and then like Classics that um just felt necessary to include well I definitely want to give you your flowers because the goal for a lot of people in your field you know people making food content their end goal is literally to make a cookbook yeah yeah I mean I’m blessed to be in the position to do it you know on the back because that that that’s literally goals right there congratulations make a book but to sell a lot of copies absolutely anybody could make a book but who could actually move no no no of course of course and the competition is insane it’s absolutely insane if I make the top 10 if I make bestseller like the list is it’s brutal I was looking at it last night and I’m like these books are unbelievably popular you know um but my my friend Nico told me to get like New York Times best selling book you need like 2,000 copies in a week or something like that it’s like you look it up it says 2,000 like minimum one yeah but a comfortable position is like 10,000 for week one um and it’s getting there so tell us when does this book release is it out the book releas is on the 30th so it hasn’t come out yet it comes out Tuesday okay for us right now um and and then I got a week after the book releases to to make bestseller um I mean it’s like I’m in a really good good spot like right now it’s looking great but it’s like you never know what books are coming out that week and that’s the that’s the competition I mean it’s kind of it’s kind of everybody’s goal in in any type of book is to to I mean [ __ ] New York Times bestseller is New York Times bestseller you know undeniable yeah so it’s kind of just like a fingers crossed hope there’s not too many crazy books dropping that week and it’s also just like about the performances cuz like there’s there’s this book right now called um I think it’s called like pizza night or pizza time or something and it’s like crushing and it’s like number one or number two or something on the on the list or number five on the list but it’s like insanely High ranked so it’s it’s very competitive is it a reputable author I’m not even sure but but whatever it is it’s it’s working it’s a very it’s very crazy U thing but I’m I’m blessed really it’s crazy to be able to have something physical have pictures you know I’ve got pictures of me when I was a little kid in in isia and and everything some fan dedication pictures and um there’s a lot of fun just like nice detail and the fact like it doesn’t really feel real at all like to be honest um but it’s it’s here you know the time’s come but it’s it’s been crazy it’s been a long time coming the last time we had a conversation I had you know this was an in conversation and it took about like a year and a half to fully fully do the book I feel he was on the show about a year and a half two years ago yeah and it was Mo on the show with him he made it a wild episode yeah yeah but mo mo uh he introduced us and uh from there you know I I saw you in Milan and we went to that inther game together yeah that was crazy last minute I was going to like buy tickets he’s like you come into the box with us I was like what custom Jersey all this [ __ ] I was like bro yeah I actually we got to talk about some stuff for inther because they they might be uh they want to do some more stuff for you but um are you a fan of any team because your family’s from EA yeah I mean my father’s a Die Hard napoi fan like die hard for sense they lost on his birthday this year it was very difficult for him and um but I I haven’t gotten into it honestly never really have but if he saw you become a fan of Roma or juventu like a a he’s not that type of guy you know he’s not that type he’s naoi fans are like that they’re yeah I mean typically typically but he’s you know he’s just proud so he’s just like whatever he’s just he’s cool to it’s cool to see that your son’s having any you know as a fan of of Italian soccer soccer in general to see that at all and like I partied with some guys from like Juventus while I was in Milan and like I told him about that remember and then I was like he’s like no way you know like what what the [ __ ] partying with soccer players is huge yeah bro they got especially in Italy especially they’ve got a presence too in the club like bro they’re just chilling they’re just sitting they’re not drinking you know and they’re just yeah they’re having a having a good time he listen enjoying to music yeah bro I was like I was with there was there was one guy there and then the next day he scored two goals I was like what the [ __ ] or was like he scored two goals then they then they came to the club it goes both ways but they’re yeah but it’s just it’s it’s a it’s cool it’s the type of thing like I said my you know how can he really at time you were Milan so the big difference between Milan and uh Rome I guess is Milan is very massive difference between the North and the South in Italy oh my God tell so tell us I I love to hear your your perspective first my first thing is the food the food in the south I mean the food in the South compared to the like I don’t think I’ve experienced food in the north to its finest like the top top top yeah because I’m I’m like a very easy access person I like to like get food delivered if I’m [ __ ] hung over and stuff like that out there bro Glo is a mess that’s brutal and like everything on there you know I saw like a margarita pizza like normal ingredients everything looks normal on the ingredient list and then you got seed oil as like the final thing they’re trying to like become more of an Americanized place to the extent that they use seed oil instead of olive oil on their Pizza which I’m like there’s no way but I’m sure that’s crazy cuz in America you’ll never see seed oil presented yeah like they’ll never say just be on there right right I think they probably have to though because like because of the like I saw very we might have posted it but the synthetic synthetic meat that oh got banned that got banned in ital they’re like the first country in Europe to do that it’s hilarious it was I remember you guys definitely posted something about it um but I mean like digestive wise like the way that I felt in in the South like in Rome in in isia especially oh my God like it’s like Little Sicily you got just the most authentic it can get the most organic food and it feels so good your [ __ ] smells the same every single time it’s at the same time every day uh you know it doesn’t matter what the hell you eat like bro we’re stuffing like turkeys just any you know whatever Cornetto [ __ ] Pizza Pasta wine it’s just like you can do anything and then it’s like you have a little walk and you feel good and you walk it off and then I get to [ __ ] Milan and I’m like [ __ ] I had like one of the fuka sandwiches like from uh that one famous place yeah it just [ __ ] me up I think they might Source the ingredients different in the in in the north um I don’t know I feel like it might be different but I’m sure I’m missing something well in Milan I would say it’s very tartufo heavy too mhm they just doing they it’s a flex yeah it’s a you know it’s a it’s a wealthy place are you a big TARTA guy or no not really honestly I’ve got I’ve got like one recipe with truffles in it I like I like it but it’s not something that I’m like I can’t find how there would be like an obsession yeah I agree you know he he loves truffle yeah I like it I like it I like it infused and stuff you know truffle not actually shaved on top or something you’re big a little bit little bit you’re a mushroom guy yeah it’s nice yeah got cook it right I have a roto like U ter so I have like a like a oh okay okay okay it’s it’s a cool it’s a cool recipe it’s mushrooms and um shrimp it’s it’s an interesting resoto but it’s really good I I’m pretty I think I’ve had that before too mushroom shrimp yeah it’s an interesting combo it’s really good I said thiso I said this in a video call me let me know if I’m crazy for this I said risoto is like a seasonal dish for me I get it do you do you agree with that there or no I just feel yeah no I feel like it’s more like a cold bro the second the [ __ ] rain comes down in Los Angeles I start making I start making really specific things like it just you want it to feel wholesome and you want it you want to feel good and and you know beans man like there’s there’s certain things that you got to you got to have when it’s cold F yeah yeah I have a foli that’s [ __ ] so good it’s it’s a classic way to do it but um that’s my go-to the weather yeah well what I know we spoke about this on our first po but like what got you into cooking and why are you so like infatuate I could tell you actually enjoy it yeah in your videos obviously there there’s like a comical aspect to them it’s entertaining but how did you figure that out it was it was just such a weird way that it all happened because I never intended to do anything with cooking um and I fell into it my dad’s got four restaurants to this day great Italian restaurants in Charlotte as I’ve probably mentioned um you said that in the first episode yeah yeah they’re all they’re all still ball like balling like usual um and I mean I made a I made a cooking video it might have been like one of the first times like I’ve only been cooking for five years um which is enough when when you’ve literally only been cooking Italian food for 5 years like you start to learn a lot about it like I’m I’m not really branching out that much I make myself a steak here and there whatever but uh at the time I made like my first viral video was fedini Alfredo like chicken fetuccini alfredo that’s really authentic right yeah it’s in the book because people want it wait so I’m curious now does that one have the Italian flag of course not of course not you want him to get murdered well the OG bro I’ve got there’s an Italian there’s a American flag on for [ __ ] sake yeah it’s kind of like you know can you find it in an Italian American restaurant so it’s like you know that’s that’s kind of where it gets a little more classified there so you started with Fi Alfredo I think I think the the first video ever was like a Pomo I I’d barely ever cooked before I made it I was home alone my mom left the house I was Liv with my mom um and I just kind of was making random skits I was like probably 600 videos into Tik Tok I had like 700k followers of just random skits like funny whatever I could come up with then this was something that I just randomly came up with I was I called it if the Jersey Shore had a cooking show and then I put on this crazy [ __ ] character how you doing it’s I made I made a how you doing it’s John from from whatever and I was like like we’re making some [ __ ] pasta and just loud screaming um and people loved the the idea people loved every all the all the New York Italian guys like they they play you know when they get more energy you get so much more into to it and that was something I kind of just like channeled and the difference is is I’m I’m not from New York and like my mom doesn’t have a heavy accent she’s from Bay Ridge yeah um and my father being from Italy so it’s like that that type the type of cadence of of uh like there’s no Italian-American accent anywhere in my family so I was playing it as a character then it might have been the second video I made spaghetti and meatballs third video I made the fetuccini Alfredo it was that third video that got like [ __ ] 5 million likes on Tik Tok in 2020 5 million likes yeah 5 lik 30 million views which I mean you got to think about it and it this was in January 2020 so it’s like yeah like CO’s about to hit um a viral video like that is like there’s only a few at on at a time at you know on the platforms um so that went crazy that kind of kickstarted it and then that’s when I I decided I was like you know I should probably that’s your I should probably stick to it a little bit and and it was easy to fall in love with it considering it was a part of my family my whole life like the cooking it’s funny because a lot of people I feel like they start messing around on social media and then the second they get into cooking especially if they have a personality that’s when [ __ ] starts booming we just had Julia Molin J on she the pizza right bro I mean she was doing like dance videos messing around bro the second she started cooking pizza and you know making other recipes she didn’t start putting it on reals until like a month ago and she’s gained like hundreds of thousands of followers in like a month she mentioned you on uh yeah I mean I don’t know where she she’s a little far from here now right yeah she’s Jersey far out of Jersey I was like would love to do a video but but it’s it’s a little far I’m sure when the time is right all stars in line always timing is every day I feel you’re always in tune obviously you know you keep up with the Italian culture and you’re cooking obviously but I feel like you’re very in tune with the the Italian especially the Italian Tik Tok Community all right the the thing the way I I’ll frame it is that he’s willing to collaborate with people yeah yeah you’re all willing to work I got to give you that and I noticed he’s one of the very few I think us and and John LCA is is your name out there like that yeah I finally put it on my Instagram are the only ones that could collaborate with the Italians and the Americans yeah yeah yeah absolutely because his range is crazy he’s doing stuff with all the big cooking guys there and he’s doing stuff with all the big cooking guys here I love my question was going to be like what’s the difference between an Italian content creator an American content that’s actually a good question bro probably the just the the thought process in general is so much more fluid when you’re filming with an Italian just because you can imagine that it’s just like like like [ __ ] all the Roman guys are like let’s go like let’s let’s do this cuz like whatever we do like it’s G to it’s going to work it’ll look good and then we get so much more in our head but but I do the same thing when you’re claping with an American you’re thinking so much deeper into because you have to think about it too it’s like think about the the en environment in in which you’re filming in Rome you’ve got like when I was just there like I’m filming with the coliseum in the background like that alone on a balcony on a balcony like the the way you feel there is going to bring out a different energy then you’re kind of like enclosed in a little kitchen you got to get so much more creative and you get a little more um like worried and insecure about the content when with the American creators but either way it’s it’s it’s very it’s a different experience but it ends up being the same in in its ways um but there I mean it’s such a fun time every single time you know how it is the hospitality of Italian people in general it’s in our blood to to just make people to take care of each other and and um that’s how it’s always been it’s it’s so inviting every every single collab I’ve done in Italy and and in general like just when I was there and I’ve done a few videos there um there’s this guy that has this Cantina but it’s like he’s got this crazy cave that has all these just relics like hundreds of years old from his family passed down down down like I don’t even know how many different things I don’t know how much this stuff’s worth like he’s got stuff all over the place and I’ve done a few videos there and just like whatever you want to do let’s do it you know what I mean like they’re so so just welcoming and it’s it’s one of the best feelings ever and like Roman particular has so much history you could walk around and see stuff from 2,000 years ago and U my most recent trip when I was there with the Roma soccer team they really take that tradition to a whole another level walking around and they like explaining the times of the Coliseum there’s like a place um where they used to do this the racing at and it the emperor could see the race from his building right and then like nobody did anything for thousands of years there because so many people died and then they just like oh now we can’t touch this you know but meanwhile it was there for 2,000 years and like if you see some of the ruins in Rome like people would take nothing looks real bro it doesn’t look real over there it really it’s m we’re we’re really lucky that we still have things standing on Earth you know that are that old I mean and even in like the architecture in Milan is unbelievable like just when you’re walking through the details the DMO is crazy like you just look at it like holy [ __ ] they buil this was built by beings like unbelievable and the same even in Naples and in so many places it’s like I have so old it’s been there forever the the the problem with Italy for me is I want to be able to experience all of it like every bit of it but it’s like you you got to take off months and go and I watched a YouTube video that was like an hour do that at work you know technically yeah um and but it’s it’s like it just never ends up working that way you know you have to kind of get back you got to get back on track go back home it’s like you can’t always stay out um out and about you know I wish I could just take some time off and go and work in a kitchen somewhere and booa or like somewhere that that you know I’m I’m not nobody’s speaking English to me that’s another thing like in in Milan everybody’s speaking English and um you know in isia nobody’s speaking English and it’s it’s nice to be able to go where your family’s from and and feel that feel that but it’s it’s like I I end up feing for it and and like it it’s like become something I’m due for at a certain point where I’m like I got to go I don’t care like and the last time I went I decided 3 4 days before I was like I got to go um you know cook more cookbook stuff like I got to take the I got to show these people that I’m like I’m [ __ ] Italian like my dad is you know it’s I just love you learn you learned a lot more of a time yeah yeah I mean you speak up much better now yeah I mean dude I I’m if it’s slow enough I can understand mostly everything especially the videos you make you’re speaking the whole time at the time like damn I got to give this kid his it’s it’s it’s kind of like its own language like the V the cooking language like I know all the words in in the kitchen um and most in the restaurant but General conversation I’m learning every day like bro I’m I’m I’m back on [ __ ] dual lingo to learn more ver like vocab and we’re talking to do a lingo too trying to do something uh trying to work with them they’re great app they told me they’re like we’re going to watch make sure you got your street going you know like we’re going to check it what do you have right now five days six days but they’re like but they you know they checked my history on my account they’re like we saw you got 36 days last year and I was like yeah like that’s right I was doing that I had a nice streak and I I got a start too it’s good I I’ve had a reminder on my phone every day at 9:00 a.m. study dualingo and 9 are you are you a guy that wakes up early so I not until I got dogs so now that I have dogs they wake me up at the crack of dawn every single day like 6 a. are you a dog walker or you let them out in the yard I’ve got a luckily I’ve got a big enough yard I let them out and they [ __ ] with each other cuz I’ve got two so yeah it’s it’s really nice like to be completely honest I’ve probably walked these dogs like like a total of five times combined and now my mom’s actually at my house right now um she went like taking care of them yeah CU that’s what makes it hard for you to travel out soon now I guess with exactly so I’m like I’m telling my sister I’m like you want to like just live at my house for two months so I can go travel cuz she has a dog too I’m like bring the dog it’s like a compound like go let the dogs out like it’s really your sister live in Charlotte or she does but she’s she’s about to move she’s like getting getting up getting ready getting out and you know um but I’m like step it like step in I want to get out yeah yeah there’s just there’s so much so much to see so you wake up 8:30 9 6 6 6 yeah I got like 6 6:30 I go to bed by like 9 9:30 I don’t party like LA’s not a party town like that like more House Parties if anything House Parties if you get if if if you deserve to get invited to the good like a good party then then you go but if you want to go party it’s it’s what’s the list of a good party in La what what do they have pasta I mean yo no I actually I went to Paris Hilton had a party recently that I went to and they had uh they had homemade uh like pizza in the back like they Brick Oven sick they had a like somebody you did a video with her too right yeah it was wild Valentine’s day was it or something like that it probably felt like it because she’s all pink yeah she she’s just all about I remember some old pink she’s super cool that was one of the that was one of those those moments was that like a you know take a breath like damn like this is it was a very interesting part of time I mentioned this um I did a podcast with Duke Gomez and um I mentioned this on his podcast but it was a really crazy time because I I went to this event and somebody somebody sucker punched me in the back of the head in the bathroom at this event um and like I was taking a piss and there was this this huge guy and like maybe and thisy other guy with him and they kind of like escorted some girls into the bathroom and went to some stall and I kind of turned around and like made a little like super light-hearted like joking the comment was kind of just like no way like what’s going on here you know like he in room they’re bringing girls in and and kind of like guarding the door they might have been doing like Coke or something in there I have no idea so I make this little lighthearted comment they’re like watch who you talking to right I this is La not to okay and um then I I get done with my piss and as I’m turning I get I get just the guy’s 652 50 hits me full force in the back of the head like right here on my ears not fun U and then a couple times in the face like afterward like to the ground bro I [ __ ] I Pissed My Pants literally and I just pissed like I was not expecting this at all I didn’t I’m so lucky I didn’t get knocked out I I that could have been bad too you could have I could have gotten paralyzed in the back of the head back of the head is sick brutal didn’t even give me a chance to get punched in the front of the face like I didn’t I wasn’t I didn’t try to fight the guy he was huge Sucker Punch I got sucker punched so unfortunately um from that I mean I was out of work for 2 weeks and my face was was messed up and um my ear was swollen my face was swollen my eyes um as it started healing it was kind of like I had this Paris video like in a week from from then and it was literally like the day of that I looked just okay enough for it to not be noticeable on camera in which I felt like [ __ ] like I didn’t want to go on I didn’t want to do this crazy crazy moment to to do a collaboration like that and like the way that I I’m like bro my face I I tried to I would try to film and then we’d turn on the camera and I look at the footage and I just got it looks like I had liver failure like like I’ve got just yellow makeup on n and um but I was really lucky that the timing worked out like that the video turned out great it was such a good time and that’s crazy um yeah I mean and and now it’s like it it’s just it’s it’s ironic no more jokes at the bathroom huh but like yeah that’s like a once in aund that’s crazy bro that’s like this this event was was big like Madison Beer’s there like there’s like high there’s there’s high high level like celebrities at these events and people are doing that like the guy didn’t give a [ __ ] who I was he doesn’t he doesn’t give a [ __ ] probably didn’t even have any idea didn’t even care yeah whatever whoever it was they they had the position they could do it so they did it wait so are you that guy now like oh that’s the guy that got knocked you know what I mean I didn’t get knocked thank God no there’s a lot of witnesses I don’t know how I didn’t get knocked out how the hell did you you like up the whole time I I I did go down but I didn’t knock out so because I I got the first punch got me and I turned around and then he went just straight into my face like multiple times and then I came down was like yo yo chill like stop me left let me know no it was crazy bro and crazy and then this kid that’s in the bathroom that witnessed it he told me he’s like I wanted to help bro but the same [ __ ] happened to me once and I was like damn uh but he was not trying to get that part to that’s definitely another reason why I don’t like going out that much in La it’s just kind of like it’s like the oh like the one time I don’t really want to then I then I do I get [ __ ] punched in the head for no reason um but it’s it’s better to like work up um and and be able to be in a more respectable room I guess um it feels better to be in like a you know with with more successful people I mean LA’s just got a lot of it’s got a lot of uh nonsense but that’s just how it is bro Big City last time last time uh we hung out in New York you said I’m going to move here and so you’re like no I bought a house I’m staying yeah I wanted to I had so much [ __ ] happen to me I had like a quarter life crisis like what do you what do you love about New York I love I love that I can I can get like four hours of sleep wake up and work like there’s a lot I kind of mentioned this earlier like changing the environment is is important um and I’ve been realizing recently that staying in just my kitchen and filming just in the kitchen and filming a regular recipe I gotta feel so good to be able to pull out the best of me in the same setting over and over but the second you step in a place like in front of the Coliseum or the Empire State Building the Empire State Building has York it’s it’s the it’s the coolest City how long is the flight from LA to Italy o do they even go direct yeah they have they have uh they have LA to Rome direct I think in LA to Milan direct we just did 12 13 the way back 13 14 but the craziest thing that I found out during the off season if you book a regular economy ticket you can get it for sometimes 500 bucks depending on the airline yeah some it depends depends on the season so it’s if it’s April like may get starts getting a little rough or if it’s like August September it’s no it’s cheap so like September September September September August no i’ May of it may uh or April and September are a good time to go the weather’s not as hot but if you want to go experience it and have like a lot more of a fluid experience really good time to go the flights are cheap the first class is empty so the upgrade I I flew it was 700 bucks when they’re $10,000 seats so I ended up getting $10,000 seats for round trip for 80% off which if if you can afford to if you want to like go ahead but no way in hell I’m going spend more than two cuz like during the summer an economy flight to to Italy is two grand like 1,500 bucks like it’s brutal uh but that was one thing that that made it a lot better to go for 14 hours was the fact that it was like 700 bucks and see fly economy but I got my answer I do um if if there’s like a a quick an easy upgrade no I don’t I don’t ever like if it’s if it’s that uh it’s 700 bucks to upgrade to to business class on a flight like that for 14 hours hell yeah do you ever get worried that you’ll get noticed being in economy and someone like I just saw some contct civilian lifestyle I was talking about that this morning um and was people deep of course yeah he’s like I got my whole team here bro so like that that’s awesome um but in general not at all I mean bro like I I had a little crazy experience in U leaving Milan in the airport there was like a whole field trip of kids there were like 20 kids and I was not in the mood like to and and I get it bro I get I you as a as an influencer you tried at least personally I try not to think that somebody’s going to recognize me I don’t like want to think that way like you don’t you don’t you got that big of a head like I tell myself like chill out like it’s not like that then all of a sudden you realize that it it might be so I see I see the group of kids they’re eating gelato in the airport waiting for the flight I they’re going on a field trip somewhere and I see one of them recognize me and it’s like no big deal de then floodgates opened bro then I like I got up I I’ve had my hood up whatever I got up I moved like to a different area to see if I could try to avoid just in case then all of the sudden like they start like flocking over there’s like so it started accumulating it was like five six seven eight nine 10 kids uh in a group I’m I’m sitting here with my hood like literally with my head down with my arm like this just because I’m like there’s a certain age and especially in a group like that when you’re with a a bunch of friends and you’re and you’re young you go crazy you know what I mean like there’s you’re not just with your parents like you know maybe I could go up and take a picture it’s like you don’t give they don’t give your and the parents would give them guidance like right and rather they were with like a chaperon the chapon didn’t give a [ __ ] um then all of a sudden I hear just like [ __ ] b [ __ ] b [ __ ] b [ __ ] to try to get my attention and then I’m kind of just I’m not looking up at all then eventually one of the kids comes up Taps me I look up he goes are you Nick Giovani and then I go nope and then he’s like okay and then walks away then they keep doing more research then more kids I’m talking 15 kids were in a group standing six feet away not coming up to me just kind of standing there with their phones out and I’m sitting there just kind of like oh man so then I get up and I go up to the to the lady at the front desk um because look like the deal is it’s like I I love taking pictures I love meeting people it’s totally great but it’s like a respectable way but it’ll be like a really it’ll be an explosive moment if I get up and start H just kind of like hey guys to to like 15 young kids like there it it it’s it’s it’s like you got to really be able to handle that you got to be ready for also the airport is not a place where you want to that’s a lot of like you know you anxiety anxiety is real you know um and I like went up to the flight attendant and or the in the front desk I was like can I just check in a little early like um I tried to explain it a little bit she’s like go ahead and I’m in the line I heard what upto [ __ ] what upto [ __ ] what upto [ __ ] for like for like five six minutes while I was in line and it just kept going and I was just like holy [ __ ] they didn’t give a [ __ ] I didn’t turn around it was the first time I’d ever like really ignored a situation and like I wanted to feel bad but I just knew that it was going to be wild if I if I pressed into it but when you travel do you go in conito much as you guys by any means but I mean you guys have two million followers I know I notic somebody recognized me and I always notice when someone recognizes me because they like like Double Take right so this guy was like maybe right by where the window is and I see him like notice me so he didn’t say anything to me and I just walked past as I walk past he’s like damn you could have at least said hi like like being like I’m like but and in my head I’m like this guy didn’t even say hi to me like what am I supposed to do like you recognize me hey man you recognize me you know me like that arrogant [ __ ] yeah you know what I mean so have you had like instances like that every day every day just feel but but the best the best thing is is when most of the time there’s no hesitation and there’s a ton of kids from uh like this all the parents from one area in Jersey all went they all went to Jersey from Monte they all came from Monte and um I was there and these kids were all speaking English but they were all like what like they were mind blown because they’re like why here like this is such a small town like why are you here do feeling yeah so it makes sense like it’s hard it’s to Sicily I haven’t been to Sicily un my dad hasn’t been to Sicily I haven’t been to Sicily a long time I went once Sicily’s it’s got to be its own Planet it’s hot as hell yeah but it’s beautiful bro unbelievably organic the like the things that grow on on the island it’s got volcanic ass and the volcanic ash from Visio fertilizes literally fertiliz there’s there’s another cook that you should collaborate with that’s from EO Christian Patron you ever heard of him I got a text today man that’s that he’s from I know that I know is literally ask him I didn’t know that you should literally like do a video CU his style is super we’re texting we’re texting like literally today yeah yeah that’s that’s crazy I didn’t know that I mean it’s he’s from East yeah ,000 people I think on the island at most um it takes 45 minutes 50 minutes to like one hour flat to go all the way around oh that’s cool yeah it’s not it’s not huge um but but holy [ __ ] 100,000 is 100,000 you you could only get there via boat right yeah yeah usually the boat goes It goes from napi stops in um pida and then goes to east or you hold a hostage though I will say anytime we post anything like uh touristy in Naples like you tell people you always comment like oh don’t worry about like bro yeah stay away stay away he’s a what’s what’s a gatekeeper yeah you’re gatekeeping the the crazy the craziest part which like I shouldn’t say this is um that most people even Italians that go to isia they they don’t go over the island they they get off the boat and they stay right there you got the you got the couple five star like two five two three five star hotels on the one side you’ve got some beaches youve got the restaurants everything’s there you go 15 minutes over the island you’re in the real e like the beaches over there are a completely different game everything that’s where everything is still $2 three bucks yeah that’s wild um and we should go to East together go I try to I try to convince everybody I mean my my dad still has his house from when he grew up uh my uncle lives there Gardens every day just like amazing living the life BR can you imagine like a month no phone or anything obviously you have your content already done right right like have it all you have somebody posting for you if you had somebody handling all your media that would be amazing dude I would love that bro that would be amazing like that’s just like all right this is like what life should be you know I mean but the thing is I feel I communicate too much like when I lost my Instagram for those three days I feel like I what’s crazy is uh my son and daughter they watch your videos on YouTube shorts do you see a big difference in people that uh know you from ages like of course the little specific it’s it’s there’s like a 5% chance that an adult says I I watch your YouTube videos do you post on Facebook or like middle-aged person you’re saying 40s 40s no like 18 plus like literally adult yeah yeah look different without apron though YouTube though you look different without the apron yeah if you walk around with the apron it would be much there’s such a weird thing where it’s like if sometimes I got glasses a mask and a hoodie and someone’s like yo and then sometimes I’m just wearing a t-shirt and then they’re like huh then I’m like you know with the the videos with I’m like I don’t wear a a shirt and then they’re like oh and then I’m like wait what you got to get in costume bro yeah literally I’m I’m trying to like feel a little normal right now you know yeah yeah know you’re dressed up right now yeah so it’s let’s get back to the cookbook one second right now there’s a lot of conversation around Italian American man like this is the foundation what I want to know because there’s so many people like you’re a real purist Italian that knows authentic Italian dishes and I think your your book is really different because even spaghetti meatballs lasagna fety like dishes that are Italian based you’re putting an American flag do you do that in real life with a friend when they they’ll see you and say oh uh I love pasta make me some fetuccini Alfredo do you go you know that’s not really Italian like do you ever do stuff like that if it gets there yeah like if the conversation gets there absolutely like it’s so hard not to correct things in that way like I re I just did my first live cooking demo um it was like the LA Times it was like Festival of books at USC um in in La uh I had to do a full live demo I made spaghetti and meatballs and um and it was funny because like I started it off with pronunciation like you guys know how it is it it’s so it’s such a strict thing I’m I’m kind of so half and half I’m so Italian American on the subject that half of me starts getting like amped about it like did you just say noodles and then the other half of me is like they just don’t know like relax and and like that’s there needs to be some sort of middle ground and there needs to be some sort of like acceptance but the Italians also love to [Music] go crazy about it you know what I mean but like [ __ ] you can’t take away that that aspect like lions field like the way that they react to videos and like pasta Queen reacting to things like because it’s it’s just true it’s it’s it’s funny because it’s like no chicken on pasta you know there’s so many the rule book is massive but it’s it’s there needs to be a little you know because the flavor is flavor taste is taste you guys know just as much as I do of the reason why these recipes are in there is because they’re good like for [ __ ] sake a stick of butter you know what I mean like chicken parm is is fire I can’t can’t eat on that’s the one dish that my father has in his restaurants that he never his his his old uh head chef ended up opening up his own restaurant eventually he was such a good Chef that he did deserve to to go do his own thing but he’s a northern Italian and he kind of was like I can’t like I can’t be serving chicken parm anymore and I think that was like small part in his reason of like I need to do my own thing but my father’s like this [ __ ] this [ __ ] sells like this [ __ ] sells like people want a chicken parm but it’s like that’s kind of it everything else is more is all authentic people going there looking for it bro exactly I’ve never met one person that didn’t like chicken par yeah like you can custom you can order chicken fettish alfredo it’s not on the menu but it’s so funny cuz uh the guys from Italy when they come visit we go to a super time American spot they’ll make fun of it but I’m like y try it and it be like it’s good it’s good yeah it’s like denial you can’t say it’s bad yeah of course not it’s the same ingredients that you know it’s pasta pizza it’s a canvas you can do so many things with it for [ __ ] sake I’ve made Nutella pasta like Nutella pasta that’s that’s just for YouTube you know just for shorts It’s funny because the kids uh they’re like well when he’s there can we make a dish with him I’m like what would you make tell me what did you say uh pizza or pasta but Pizza he said pizza with Nutella yeah and pizza with Nutella is Italian and then he said instead of pepperoni you put Oreos as pepperon that’s pretty cool that’s uh that’s pretty cool get the K I think you take the you take the top off so it looks there’s like a bunch of little white circles that look like pepperoni well I want to ask you now because I feel like you probably have the best knowledge of this give me an Italian Dish that you think deserves more love like it doesn’t get the recognition you know when you think Italian dishes you think obviously carbon kacho Pepe panesa give me one that’s not talked about that you think is bro I think my favorite recipe ever is orete uh broccoli Rob Marini pepperoncino like a hot italian sausage um peino there’s something about it specifically with orete too the way that the orete like Stacks together sometimes and like you get two for a price of one and one bro it’s it’s one of the the tastiest pastas ever and I mean I there’s not really a name like I have it I just have like and like that’s it and and um but that’s one of my like favorite things ever I guess that’s not really a great example but ah [ __ ] there’s there’s give me give me an uncommon one that you think is really good like I want you give me like not a tradition for something crazy like a uh like pasta nor like nobody really knows what that is you know what I mean like give me give me one that’s like out there that not underrated pasta dish yeah like it really no I mean okay my another one that I’d say is is definitely like my top three favorite dishes ever is the nap the Ragu Napolitano like you’ve got short rib uh Chuck sausage and you slow cook it for 3 hours it’s the it’s the the fats that release from the beef that create this that that red that dark red sauce and like the way it comes together and like it’s bro and I I put basil too at the end basil and [ __ ] ton of Parmesan and it’s just got the most depth it’s got so much so much flavor and that’s got to be one of my favorite things too but again it’s it’s a it’s a time thing that there’s certain there’s a lot of dishes that you can whip that you can whip up in 30 minutes that are delicious but there’s plenty more that you can take some time and holy [ __ ] I mean that’s that’s an example of one that’s not that common um at least but it is but it’s done so many different ways right right um so you now you gave me one that’s a little more Uncommon now you got to give me one that you personally think is like the most overrated Italian Dish ever damn I don’t even like want to say it yeah but do you have one in mind or you just like I like carbonada of course but like the probability that it’s as good as it gets is so hard like it’s it’s got to be it’s got to be perfect to be a carbona other dishes you can get away with it and taste and it can taste good but there’s something I people have to be able to relate that that you have konata it tastes different every single time because it depends on the Guan chal it depends on the peino because there’s different peino different Guan chal from different places some people throw curve balls in it and egg cream and don’t s the egg or whatever you know like I’ve never tried the wild alternative carb but like it’s like that’s it seems to be Blasphemous at this point like how much there how much combo there is around carbonada is crazy it’s easy to botch that too like the second you leave that egg in for too long like you can [ __ ] it up pretty easily like it’s one that took me a long time to be able to get it right you just have to [ __ ] patient two ingredients too yeah it’s it seems to be so simple but it’s like you the heat’s not right you’re you’re getting balls of peino chunking up in there and like um it’s it’s it’s really crazy what Italian food can that’s why the ingredients matter and that’s where where it’s organically done bro I can’t drink a glass of milk in the US like regular like 2% glass and not feel like I’m lactose intolerant and at least a like a little bit enough to like feel cheese like directly I can’t just like eat a big chunk of like American cheese Mozzarella for sure but over there I can eat a whole ball of BFA like this big and drink a glass of milk and I’m like that’s nuts bro like I said in the beginning the poop smells the same no because like it’s it’s really it’s mind-blowing it’s mind-blowing but then um but then I felt it a little bit when I when I had a little more like fast food in the north but but that’s fast food you know yeah so I can’t their fast food’s better than ours for sure yeah the chicken nuggets in Italy yeah they taste amazing they actually taste like chicken right but you know what’s crazy to me now that you mentioned milk I feel like milk in America is always refrigerated everywhere else I’ve been to it’s like on the Shelf my uncle when I was just there he goes like he started getting like mad at me when I started putting the in the fridge um the BFA in the fridge right right right so does not need to be in the fridge and then I’m just kind of like what okay like I’m I trust you right but that the shows man man like there’s crazy right there’s a reason why my dad’s like when I used to fly back to Charlotte he’d be like in the Napoli airport they have a Balo uh store that’s open till 5:00 a.m. I think or it’s 20 it’s the only thing that’s open in the Naples airport like 24 hours and you can go in there and buy tubs of buffala and my dad’s like bring bring bring back you’re allowed to they just have to like monitor it or has that Customs gives you you get you get through already it’s after the checkpoint oh oh so you just carry it on so everybody’s got big bags they take home big bags to America 15o liter that’s the best though and that’s like a staple on I’m lucky to have an Italy in in uh but still the it’s it’s the the the way to be able to get that cheese and milk and everything and and bring it here I heard that there’s somewhere somebody maybe in in the city here that apparently makes like the best bual Mo but but it’s because they bring the milk freeze it or something it’s like the closest it can get you know what I mean to being the freshest love to try I love buffalo Mo favor it’s just something about like this this the salt the little bit of the right amount of salt and the texture and it’s just unbelievable people don’t get when people see Italians make a sandwich with just mozzarella like and and like that’s it yeah they’re like what but then when the when the bread’s that good and when the pruto is that good and the mozzarella is that good it’s explosive in flavor the second that something’s not as good as it gets ingredient like the you know the wheat the milk the che anything it’s it’s so pure there that those simple things can taste so good and that’s the the thing about Simplicity and the thing about like any advice I give to anybody cooking anything out of my cookbook is spend a couple more dollars on a better Source go to a farmers market if you can if you really want to like impress yourself or impress somebody and you’re making a dish that’s got five ingredients those five ingredients need to be good like don’t use the little the little thing of of Basil that you can like pull out of like a little tin thing and garlic and all this stuff like it’s going to ruin it you know it’s all about those Simplicity but the quality it’s all about American lifestyle that jar is convenient you know mean right dude jarc I never heard of jarli before really you know what we’re talking about I know yeah that the minced garlic gar in the well I have another little question I have to ask you and this is funny because I feel like you always talk about this one Italian food especially the pronunciation it really bothers you oh my God I was I was going to bring I was just going to ask you what makes a good brusketa is that the one that you I was going to say like in your videos that you always really pronounce the food good and sometimes I see comments that people are like why is bro forcing it you know oh yeah yeah it’s probably been like a year since that since like the last comment like that that you noticed probably though now I get Italians that are like you speak Italian really well and I’m like no like it’s just a pronunciation that’s that’s getting better um that convinces somebody I want to have a nice conversation a little bit so give me the brusa what makes like a a really good brusketa not big brushetta guy no huh Bretta brus why you say Bretta Bretta is that how it’s spelled Bretta there’s a c in there I’m try to speak Italian uh yeah what makes a good one how do you say shaved scraped I don’t know how to sayra yeah like DJ DJ in the past you see in the past like I don’t know how to say the rim the words I don’t [ __ ] know yeah I don’t even know with the garlic with the garli the first thing aali complain about is that we put too much garlic yeah yeah yeah yeah but it’s true you just said in Italy it’s way stronger so much strong that’s why we put 15 cloes yeah because our shit’s weak that shit’s strained down likeed yeah no but the the brusketa is so simple but again it’s like how fresh are your tomatoes fresh I was going to ask you can you have a good brusketa in like may I mean not may but maybe like in like February is that possible yeah I mean my recommendation is always just like um the the like multicolored cherry tomatoes yeah doing that um oregano what else mandatory basil you don’t need like a nice bread though what kind of bread are you using for that dude usually I mean they usually use old bread for that stuff no not to make go to waste like a nice sour dough yeah but you’re right like a stale you can use anything I mean you can even use like a baguette if you want like slice if you want it to look like it but I’ll take whatever I can get slice it I don’t care if the piece is this big if it’s an Italian like rustic loaf of bread and it’s this big great and you know it’s so again so simple but can be so good that’s why when you have it in a place that it’s really meant to be grown that it tastes so much better but it’s still really you go to the grocery you can go to anywhere and pick up cherry tomatoes and or whatever you know and it’s going to taste good I see a lot of Foodies now they’re doing the sourdough starter kits have you seen like the videos of sourdough starter like moners sour sourdough is healthier to eat than like regular bread right is that why you know there’s sourdough starters that are like 2,000 years old really yeah what the hell I got to fact check that but I’m pretty sure there’s one person I think it’s something [ __ ] ridiculous Cas down generation yes yes make sure you take care of the salad though no literally there’s people that are like this is my family’s 832y old sourdough starter I swear to God that’s wild too it’s fire it’s also like a monster like it is it bro when they when they drop they like drop the bowl and it goes it starts like it starts going going nuts it looks like have you ever done it whatever it’s called no I haven’t I haven’t made a start was somebody that I was talking to recently conent I know I know one one thing I want to ask him before we go did you ever consider opening your own restaurant is that something you think in the word you know what I really wanted this is my like goal this is so like it’s not far-fetched but it’s a really tough concept my goal is to like build the restaurant of my dreams in Italy like build it there EV I want every single P I want to open it here I want it to be in the most competitive place in that it can be but I want it to be the closest you can get to like a real Taste of Italy to the extent of like milk flown in every two days that’s cool everything I want the G I want everything you see touch and taste in the whole entire restaurant the napkins the fabric like I want it to be like over the top Italian Italian just to give people like it yeah it’s going to be [ __ ] expensive and like uh to build it and probably to to sell it but it’s like I’d rather it sucks that it’s like my goal is to build something that doesn’t really have a lot of like accessibility to the common person but it’s better than opening up a chain of restaurants that I’m not there that I go to occasionally that they slap my face on and tell people come eat your pasta come eat your pasta and like I don’t want people because it’s like the Gordon like Gordon Ramsay’s got so many restaurants and like they get a lot of times they get a lot of [ __ ] for it because but how it’s quality control on that many of course but but that’s just because it’s like that’s what I’ve seen in my family my father has his four solid ass restaurants he’s he’s had 12 and total trial and error finally got down to like the solid four he’s there almost every single night every single one for 25 years and it’s like if you can’t if you can’t do that if you can’t be there and you can’t like love it like that it’s not going to be as as best as it can be so it’s like I’m hoping that I get to a point in my life where I can really put I don’t want to make any money from it I want it to be I want it to be like a home and I want it to be like a piece of art like the this this establishment and um the money make itself no but like the type of thing where like I don’t even I don’t I don’t even care to make I I’d put Millions into this restaurant I don’t give a [ __ ] if I ever made a penny from it because it’s like that’s the restaurant industry in general is [ __ ] hard and to make money from restaurants it it takes years man it takes year sometimes 10 15 years to see profit at even if you’re B I never used to understand I used to be like Dad your restaurants are packed all the time why like why are you not [ __ ] loaded like and also always ask him like why don’t you open up restaurants all over the place like you got to you got to chain you got to do like Gordon Ramsey like but he’s like no I want to be there like it’s different um so that’s kind of why I hope one day to be able to do that um but it’ll be a while for sure and it’ll be like a it’ll be a passion project I don’t know like I I know enough but I want to know so much more about everything of the Italian cuisine and I love it you can definitely do it bro it’ll take some time it’ll take some time for sure let me challenge your Italian lastly okay okay I’m like two hours of sleep all right here we go two hours of sleep that’s his that’s his ratona which is a little a little weird one because it’s got a little cream it’s kind of like a pink sauce with sausage and peas It’s one that I grew up on that my father has at his restaurant that’s your favorite dish right bro I think I’ve had it 500 times yeah I remember you saying that did I mention that yeah yeah not this pod last pod yeah sounds so good so that’s one of them second one ooo Milan with uh yeah yeah V shank um and then the um ragua Napolitano like I mentioned it’s just it’s it’s different it’s Unique and one thing I put in the cookbook I put like like half of the sausage bro you cook halves of sausage for 3 hours and the sauce that [ __ ] turns into like butter yeah you got to take that [ __ ] out so all that all that fat that just soaks in that Rago are my favorite I recently had like uh I don’t want to say a white Ragu but it was no sauce it was all like butter there’s a restaurant that I went here with uh Jack’s dining room that we went I can’t remember the name antio no antia PESA wait no no I’m wrong I’m wrong that’s willburg that’s right right here but this place they had a they had a a sausage with like a pasta dish with with marap which was so unique and sausage and truffle I it was it was something that was it was it reminded me of what you were just saying it was insane um and I got I I keep forgetting what Jack singer was pronouncing this one pasta and it was [ __ ] killing me man it’s uh it was like making you cringe type of thing or like yeah because it’s like that but that’s just how you pronounce it in English um I got to remember I got   5. Bro I'm italian American honestly I've never been to Italy 🇮🇹 want to go real bad. If someone said there was a italian restaurant that was so authentic but cost 500 to 1k a meal im there an if it's good I'm a regular. Reason I say this is I wanna go to Italy to eat not to see art not to go on Beach not to go to to see pope but I wanna eat I want parm from the region I want wine I want seafood come on bro u have a helluva idea
