[Music] welcome back in today’s episode we are going to look at the sauce from in the region in the center of Italy this is the original and authentic meatball sauce the ingredients are 200 g or 7 oz of ve mints three Heap tablespoon picino Romano one carrot diced one celery stick diced one half onion diced fresh basil fresh parsley extra virgin olive oil one bottle of or 1400 G tin of whole peeled Tomatoes crushed one egg salt pepper start by placing a medium pot on your stove and add a generous amount of extra virgin olive oil now add the diced carrots onion and celery and cook till golden brown and the vegetables are tender now add the b or the crushed whole peeled tomatoes and stir thoroughly add a little water to the bottle or tin and add that to the pot stir thoroughly and close the pot and turn down the heat to low this sauce cooks for about an hour stir occasionally now it is time to make theoo or mini meatballs into a bowl place the ve add a Sprinkle of salt along with some pepper add 3 tbspoon picino Romano some chopped parsley in one egg combine well using your hands making sure the mixture is nice and wet and there are no no large chunks remaining place a little extra virgin olive oil on the side of the plate to moisten your hands and prevent the meat from sticking to your fingers line a baking tray with baking paper then moisten your hands with a small amount of the olive oil pick up a small amount of the mixture and roll it into a 1 cm ball no larger using the palms of your hands then place it onto your tray repeat until you have used up all of your mints mixture this is timec consuming but it will make make all the difference to cook Theo add a generous amount of olive oil to a skillet when it is hot add the meatballs gently so as not to damage them fry the meatballs till they change color no more than a minute to a minute and a half drain and place them into your sauce pot and stir gently now cook your pasta and mix together with the sauce plate and serve thanks for joining us today until next time happy cooking
