here this is another episode of cooking
with mom there’s mom say hi mom how are
you she just turned 80 and I’m here
celebrating her 80th birthday party with
my family remember we did a 30-minute
marinara a few years ago and it was a
killer Diller recipe and everybody loved
it I’m gonna let mom tell you what’s in
this what no what are we making today
mom we’re making making Italian zucchini
that could be called Jackie’s Italian
zucchini if you like and I’ll show us
the recipe not this time I’m gonna let
you know what we’re going to be 20 min
but what are we doing here we’ve got
mushrooms what else and we’ve got red
pepper and we’ve got our nice Vidalia
onion nice and what are those that’s the
starting to show what are those
beautiful green zucchini Italian
zucchini and then what’s this we can’t
cook unless we have garlic and we get
the red you know a nice parmesan cheese
wonderful boy imported from Italy and
then Marzano tomatoes are best they’re
the best all right how’d my mind do she
did pretty good you know she hasn’t been
around as long as foster but she did
really good we’re gonna put this
together we may add a little basil I
grew up with this recipe it’s delicious
and it’s very healthy for you so are you
ready mom my you ready ready
she’s digging through the drawers
looking for stuff like that it’s like
that like a packrat will find it there’s
the basil all right well we’re gonna go
prep these veg and then when we’re done
when put it all together okay see in a
few minutes I’ll see you in a while well
first we have to put olive oil in the
pan that’s right and here’s the pan we
have a hot pan okay start off a little
of this extra virgin olive oil mom put
it all in there and the first thing I’ll
let you people out there guess what
we’re gonna add garlic and onions you
know so Maya’s got some garlic and put
it in there
there you go thank you
all right that’s well that system good
let’s bring the other plate over here we
got clear I’ve got on this drop veg
let’s bring it here look at it there we
go
I did all the chopping my mother look
very very slow on the chopping let’s get
the onions in there Marni one let the
garlic go a little world all right oh
yeah
get those we’re gonna get those soaked
down a little but not too much right you
want to keep some biting them right stir
that up a good job slicing everything oh

that’s the key people love that so we’re
gonna let these onions go a little while
probably a minute or two and then we’re
gonna throw in the mushrooms
okay so we’ll let that sizzle and we’ll
be back with the mushrooms anything to
add my that’s right in a moment all
those onions are getting getting nice

you know to Italian there you go I’m a
crazy garlic burst oh my god that’s look

spices to not be recognized sometimes

that’s right I’m ready for this one this
one’s easy is that enough who can you do

Jackie’s a tiny zucchini it’s vegetarian
it’s killer-diller
right so you’re gonna you’re gonna cook
this down a little more when we add the
tomatoes because I’m not gonna carry
stuff around or not because when he has
all the tomato in it you won’t even know
it’s a drug that’s right but you’re
gonna give a little steering base on it
how we doing on seasoning you know I
think seasonings fade away you have to
keep at it when we add the sauce right
keep adding it so we ready for the San
Marzano tomatoes they give it a couple
more minutes please two minutes all
right so I want you to say see you in a
few minutes so you went a little bit
she won’t say what I tell her to say if
it’s I say a few minutes she says a
little bit if I say a little bit ceases

Tomatoes added tomatoes and I have to

because we were concerned if that’s
enough tomatoes in there I think it’s
just enough you want to scrape the rest
of it how you doing over there Samantha
so I’m gonna bring this to a boil right
Maya then we start simmering right I
don’t believe we need that up again no
we don’t how does that look like that
looks great now a little more pepper
nice okay we’ll let you take over
thank you now the seasoning Maya what
else do we need to basil that’s what I
do I keep adding things everything but
the kitchen sink
almost almost there’s my mother’s very
young a TRL hands so my how could you
put up with me after all these years
I’ve given up trying alright so now what
we bring this to a boil we simmer it
covered for how long
well simmer it for a while and then
we’re gonna add Parmesan cheese thicken
it in case it’s too thin okay okay yeah
so we’ll be back in a while how about
any hot pepper flakes what do you think
we needed a spicier is a good like this
right I’m not doing this in hot pepper
flakes spice well we don’t we don’t care
about other people today just mom and me
so that’s what cooking mom’s all about
here’s my mom in the drawer here’s your
hot pepper flakes I think she stole
those from a pizza place she did she
admits it there you go
everyone’s gonna hear this you know
millions of people will watch this all
right we got that to a boil ma let’s
let’s give it one more stir I’ll have to
put the temperature
down because you know the covers oh well
that’s that’s why it’s called simmer not
boil let’s get a ready for a simmer we
should take what’s the simmer like a
three over four
simmer is this no is this okay she did
that do you need to take a Ted taste and
see where we’re at I think so I hope you
don’t mind a clean spoon yeah clean
spoon until she puts it back in that’s
going to put it back in don’t worry give
it a taste see where it you know put you
can put it back in but you put all the
the backwash in so that’s okay what not
spicy enough need something more garlic
how about some garlic powder I don’t
have okay we’ll put some our garlic in
there it’s gonna be good let it cook
down all right while she experiments to
get the right flavor we’re gonna let
this simmer and next time you see us I
really think it’s gonna be time to eat
this stuff keep experimenting mom I
taste everything I cook well of course
and they say even on television the best
cook to do that of course they do that’s
why I’m saying to usually don’t use the
same spoon i rinsed it okay
all right in usually I’m full before I
sit down to eat all right okay so we’ll
be back in a few minutes we let this
simmer and it’s gonna be rockin you know
all right it’s been 10 minutes I think
we need another 10 20 minutes I’ll let
my my decide let’s lift it up ma how’s
it look looking very good very good and
you took a sip now it’s it looks a
little juicy but I know that’s gonna
cook down but they even thicken that up
we’re gonna use some parm right that’s
what that’s what is it so but I you
think the zucchini needs a little bit
more cooking and that’s where you judge
it everything else is pretty good
zucchini is about how many minutes my

five to eight minutes five to eight not

bathwater you know so that looks good
I’m gonna put a little more in here and
you’ll see what we do after we have to
you have to taste like I said earlier
that looks awesome so you’re ready for
another taste well I think so let me get
this all mixed
it looks awesome so you’re gonna just
shut it off or just put it on a low
simmer what do you think right now we’re
gonna just leave it as is once you grab
a zucchini and tell me if that this if
it’s cooked al dente right that’s our
goal we’re going a little chewy right no
chewy then have some sausage that’s a
big that’s a big bite it’s a big huge
fan following you’re gonna really take
that bite oh my good when it cools high

more and then we’re gonna stitch this up
