I saw this pasta shape on IG from Pasta Maker Nicolas Potoglou. Such a beautiful shape and I was so excited to try it. So much fun to make. It’s a variation of an old shape from Ligurian, called Mandili de sea meaning silk handkerchiefs. The filling is ricotta, parmigiano, salt, spinach, sausage, and spinach. Tossed with a butter sauce.
