Vincenzo, love your videos! I recently made your Carbonara recipe using guanciale from Graziano's grocery in Des Moines, Iowa…my wife is Italian and that's her hometown. It was the best pasta of my life! That said, her family red sauce is the best ever as well. Keep those videos coming!

Why didn't you go to Luciano Monosilio if you wanted to show us how the best carbonara in the world is made? Really disappointed in you for that. And this is coming from a guy that initially learned how to cook carbonara after watching you react to Gordon Ramsey a couple of years ago.
I want to see Vincenzo try the Italian restaurants in a place such as Little Rock, Arkansas or Des Moines, Iowa and do a video of it.

Vincenzo, your 2023 carbonara looks excellent and, by looks, keeps getting better and better with every new videos you create and upload.
Please try Ristorante Abruzzi in Rome (closed Saturdays) near Piazza Dodici Apostoli. In my opinion, it is the quintessential carbonara (made with rigatoni). The guanciale is crispy. The quality is on such a high level that it’s extremely difficult to replicate. My guess is that the restaurant has a secret technique or method that they do not tell the public. I would say every authentic restaurant in Rome has their own secret methods for preparing their own version of carbonara. I myself want to know the secret touch.

I only have access to Pancheta but I was wondering what are the thoughts about chopping up a Red onion with the pancheta, mixing it all together in a ziplock bag and placing it in the fridge for awhile before frying? Red onion in the carbonara sound good or no?

I was just at MARITOZZI yesterday and it’s not good cmon Vincenzo . It’s 14 euors served on a paper plate and the guanciale is dry and not tasty . Also ur portion in the video is bigger 😂!! La Fraschetta di Castel Sant’Angelo is so so much better and it’s only a 12 euros . Luciano’s still no.1
