I loooove schiacciata. Had it in Italy and dreamed about it ever since, and eventually made a decent one myself. I don’t make bread much so I haven’t done it again, but the alarm I set on my phone to time the rising is the same one I use to wake up daily — so every morning, I look at my phone and see “next step schiacciata”
