A little italian pasta dish featuring vermicelli, the marginally thicker cousin of spaghetti. With ingredients most household already have. A lot of garlic went into the preparation of this dish, almost 2 whole bulbs so please adjust according to personal taste. Pour some olive oil into your cooking dish, preferably one with a large surface bottom, cut individual garlic cloves lengthwise into thick pieces, fry on moderate heat for some 5 minutes. Add cold water, cook the garlic until it gets tender, add the olives, add the chilli flakes, add oregano, add tomatoes, add the pasta. Cook everything together risottato style making sure the pasta doesn’t stick to the bottom of your dish. When the water is used up add a bit more. Add the tomatoes. When the pasta is cooked al dente and the tomato chunks have melted more or less, turn the heat off, add the drained pieces of tuna and toss everything together. Check for salt, black pepper, olive oil and if you like a squeeze of lemon juice. Because of the cooking process garlic gets very soft and totally dissapears in the background. Enjoy!
