    Spaghetti (I used bucatini yesterday and didn’t have enough for today so I used thin spaghetti.) Guanciale, pecorino cheese, three egg yolks and some pepper.

  2. check out the channel on youtube called alex, french guy cooking. he did a series on this and showed a technique where you make the sauce like a hollandaise. it hasn’t failed me yet.

    I recently found an Italian market near my house that carries guancale and I am anxious to give this a shot with something other than bacon or pancetta.
