The best pasta I ever had was in Italy when I was a child. My grandparents live in Abruzzo in SanBiaggio, a small village not far from Monte Casino and Atina. We went on a mountain hike and bought cheese from two sheep herders Because they camp there all summer, the sheep graze up there and make cheese. There was just-made reccotta and then we made spaghetti by the fire. I don't know if it was the air or the whole experience but the pasta I definitely remember it as the best ever. But basicly i love all Pasta Dishes ( if they not made by Jake or others 😂)
Ask to Vincenzo what is his favourite pasta dish? The pasta with the more amount of pecorino cheese, obviously 😂

Carbonara is amazing, but it happens to be among my least favorites. I mean zozzona, buttera, norcina, amatriciana, norma, this is a lot of ppcompetition.

Fettucine Alfredo, Spinach Tortellini with Alfredo Sauce: 'Hat shaped pasta, stuffed with a blend of roasted chicken and Mortadella meats, and Romano cheese.' with Parmesan grated over, Spaghetti. Haven't gotten to explore a lot of other pasta dishes to know if I like them or not.
