INGREDIENTS (about 30 meatballs):
-50 g stale crumb of bread (1¾ oz)
-350 g sausage (12¼ oz)
-300 g ground beef (10½ oz)
-50 g grated Parmesan (1¾ oz)
-2 tablespoons chopped fresh parsley
-Salt to taste
-1/4 teaspoon dried oregano
-1/4 teaspoon grated nutmeg
-Black pepper to taste
-2 eggs
-3–4 tablespoons extra virgin olive oil
-500 g tomato puree (1 lb 1¾ oz)

👉🏻 NOTE – For a keto meatball recipe, replace the bread with 2 tablespoons of almond flour.

INSTRUCTIONS:
To prepare the meatballs with sauce, start to remove the crust from the bread. Take the sausages, delicately cut them lengthwise and finally remove the casing. In a bowl add sausage, beef, crumb of bread, parsley, salt, black pepper, oregano, nutmeg and mix. Add the eggs and start kneading with your hands until you obtain a homogeneous mixture.
With the dough obtained, form spheres weighing about 30g each, taking a small piece of dough and mixing it with both hands: with these doses you will have to obtain about 30 meatballs.
As soon as all the meatballs are ready, heat the oil in a non-stick pan and, when the oil is hot, add the meatballs, leaving them to cook for about 2 minutes on each side. Add tomato purée and season with salt and back pepper. Cover and simmer for 15–20 minutes. Serve your meatballs with sauce hot, decorated with fresh parsley.
