
What am I doing wrong? 300g flour (mix of 00 and all purpose) to 185g eggs. This is after 10 min of kneading. It’s hard. It’s still usable and the pasta tastes great, but I don’t think this is what it should feel/look like. Too much flour? I cant seem to get it right. It’s either too soft and a pain to work with, or too hard and a pain to work with.
