I’m sharing the best recipe on how to make Penne Alla Vodka! This pasta recipe is super easy and quick to make. First, we’re going to make our very own homemade tomato sauce and then we’re going to add a dash of heavy cream, vodka, and parmesan cheese to bring it all together in 30 mins or less. This Penne Alla Vodka is just as good if not better than anything that you’ve had at an Italian restaurant. It’s the perfect date night recipe. 1 lbs Penne Pasta
½ cup Tomato Puree
1 cup Heavy Cream
½ White Onion Diced
6 Garlic Cloves Diced
½ cup Shredded Fresh Parmesan Cheese
1 cup Vodka
½ cup Tomato Paste
2 tbsp Fresh Basil
½ cup Pasta Water
Kosher Salt & Black Pepper
Olive Oil
¼ tsp Chili Flakes *optional
1 tsp Sugar *optional

What’s for dinner hey everyone i’m chef z and welcome back to my channel chef z cooks today i’m going to be showing you how to make penne ala vodka now panela vodka is an italian american dish and it’s super delicious in fact it’s one of my all-time favorite things to order at the

Mom and pop italian restaurants here in new york city now there’s a ton of different ways of making panel vodka and one of my favorite ways of making it is by slow simmering a tomato sauce and then adding some cream to it to really make the vodka sauce nice and velvety i

Will be walking you through all of my tips and tricks to helping you get this dish perfect each and every single time so let’s go ahead and get started making panel vodka is actually really easy and you don’t need that many ingredients to really pull together a

Wonderful and creamy sauce in fact it’s so easy to make that you’re going to be making this time and time again We’re going to start off by cooking our pasta so we’re going to bring some water to boil and then we’re going to add a few teaspoons of kosher salt you want to make sure that the water is very well salted because this is going to flavor our pasta

And it’s also going to add some flavor to the vodka sauce that we’re going to be making later on and you also only want to cook the pasta about three quarters of the way through because you want it to maintain its bite once we finish cooking it later on

And once the pasta is done we’re actually going to take out about two cups of pasta water because we’re going to be adding it to the sauce later on and it’s going to help the sauce become really nice and creamy and also cling to the pasta

Once the pasta is done we’re going to drain it and now we’re going to start making our vodka sauce so we’re going to warm up some olive oil and then we’re going to add our diced white onions and we’re also going to be adding some diced garlic

In addition to that we’re also going to be adding some kosher salt because this is going to help the veggies soften and sweat now we want to make sure to cook this over medium heat and we also want to make sure that nothing burns because remember we are going to be building

Flavor so if the garlic or the onion burns then that bitter flavor will just transfer into our vodka sauce and that’s definitely something that we don’t want to happen so once the onions and the garlic have developed a little bit of color just like you see right here we

Are now going to add the star of the show which is some vodka and this is going to help extract even more flavor from the yummy garlic and onions now you want to make sure to use a good vodka and it doesn’t have to be the most expensive one

Just for starters i am using some tito’s vodka now once the vodka has reduced by at least half we’re going to go ahead and we’re going to add some tomato paste and you just want to very gently work it into the onions and garlic just to help break it up

And once we have mixed in that tomato paste into the onions and garlic we’re now going to go ahead and we’re going to be adding some tomato puree now tomato puree has some really nice flavor and it’s really going to add to this vodka sauce i like a vodka sauce that’s nice and

Creamy so i like to use tomato puree as opposed to some crushed tomatoes which is going to have some tomato chunks however either or is fine we’re now going to be adding that pasta water that we took out earlier just to help combine the sauce a little bit more

And because that water has some starch in it is also really going to help the sauce become even more nice and creamy we’re going to cover that and we’re going to let it simmer on low for about 20 minutes because those flavors are really going to come alive and that

Tomato sauce is going to reduce we’re now going to add some heavy cream and as you can imagine this is going to take the sauce to the next level and really turn it into a vodka sauce that you’re going to love so we’re going to mix everything until

It’s well combined and now everything is really going to come together pretty quickly we’re now going to add some fresh basil and this is going to add a nice brightness to the sauce and we’re going to add some freshly grated parmesan or pecorino cheese now it’s important that

You grate it freshly so that the cheese really melts into the vodka sauce and adds beautiful flavor and once you’ve mixed that all in we’re now going to make everything come together by adding in our cooked pasta now i’m using penne pasta and i always make sure to get the ones with the

Ridges because this is going to help the sauce really cling onto the penne now very carefully we’re going to go ahead and we’re going to fold it into the sauce and it’s important that you do this over low heat now i did cook my pasta three quarters

Of the way through because the heat of the sauce will continue cooking the pasta all the way through and by the time you’re ready to eat the pasta will be perfectly cooked as opposed to mushy so there you guys have it that’s my recipe for some penne and lavaca i

  1. One of my fav dishes with thin sliced chicken breast. Taste great with Rigatoni as well as it holds the sauce in the middle. I substitute whit onions with shallots, my preference. I always use your recipe and right now I just thought hmmm I have yucca too maybe I can also make some yuquita frita. And I got hype came here to see if you have a video and I’m like ughhhh I don’t see one. Hopefully you’ll make one soon. Just giving you some ideas. Thanks again for all that you do.
