Start to dry the pasta will lose all the benefits and all that beautiful combination it’s gone think of this when you make love you want to be connected right if you’re not connected there’s no enjoyment right it’s the same thing for pasta when you make your pasta mix it

Together serve it in the plate put some cheese if you want and then you eat it it’s very important remember you make love together not by yourself number two please do not serve the pasta in the same plate as a steak and some sometimes salads I see people serving spaghetti or

Pasta whatever then they have a steak or chicken next to her in the same plate and sometimes the salad too please don’t do that please that’s enough first because Italian food does not deserve that second you deserve more in life don’t tell me you don’t have plate in

  2. I sometimes wish I had not come across your recipe for tomato basil sauce with the sofrito and combining it with the passata (which I also make from a whole peeled tomatoes). Now when I want to make anything that needs a red sauce like spaghetti and meatballs or lasagna, I cannot bring myself to use jarred tomato sauce, so if I don't have the time (or will) to make it, I won't make the dish at all. Nothing beats the freshness, the flavor of homemade sauce without any of the sugar and preservatives that comes in most jarred sauces. When I make it for family and friends it has always been a hit, they can't stop raving about it.

  3. I've been drinking and making coffee since the 90s and only after watching this i realized why i subconsciously leave coffee to "rest" for a while after i've brewed it in a cezve: so it's not scalding hot when i drink it!
    To be fair, if we're talking about coffee-drinking culture outside Italy or Turkey, then it's appropriate to have a hot coffee. I can't explain, it's just extremely lovely to feel how the cup warms your hands, the steam washes over your face, the hot liquid warms your inside. Coffee that's just "warm" doesn't give that sort of feeling, it has to be hot for that.

  4. Hot beverages should be 60°C more or less. OK, high end tea you'll brew at 50°C, so it will come out at maybe 40°C already.

    High-end espresso at championships is often brewed into chilled cups or over iced metal balls to chill it down immediately.

    Because unlike what you said, hot doesn't preserve aroma. Chilling down immediately reduces evaporation of volatile compounds, and taste reception is stronger with cold coffee.

  5. Ok I understand your concern about putting sauce on top of "dead" pasta. However in China, especially Beijing, there is a famous noodle dish called zhajiangmian (thick noodles with fried bean sauce) served like this. The sauce is made from ground pork mixed with fermented soya bean paste. Depending on which restaurant you go to, this dish can be served either sauce placed on "dying" noodles or in seperate bowls. You just mix the noodles and sauce by yourself before eating.

  6. I agree with anything besides the nespresso point. If you really want to drink a coffee like an Italian you make coffee with a bialetti. Or better with a industrial coffee machine.

  7. I think coffee in a real cup ☕️ or a takeaway cup 🥤tastes exactly the same. People have coffee in takeaway cups because there’s no time to really enjoy it when they’re going to work. People are addicted to coffee though so that’s another reason 😂

  10. Have to push back on some of the coffee stuff Vincenzo.
    First of all you say "espresso" while showing a video of a Moka Pot. Not knocking Moka pots, if you use them right they produce good results, however it's not espresso. Moka pot coffee is about 1/4 the strength of espresso.
    Now despite being half Italian myself, I am not that big a fan of Italian style coffee, it's too darkly roasted for me, I prefer light roasts that give more floral or fruit tasting flavours aside from the roasted dark chocolates of (good) dark roasts. Aside from Italian food and barbeque I'm also a coffee nut, I roast my own coffee beans and everything at home.

That's like how we make Indonesian food, We're just as passionate as Italians when it comes to food and main reason i and many Indonesians hate Gordon Ramsay how he calls Rendang a curry grrrr there is not pinch of curry in Rendang and it does not belong in fried rice. That's why i truly understand Italians to how they make food and i truly respect Italian cuisine and when i cook Italian food i do it the Italian way and respect the food.

  12. One important thing about the coffee temperature – serving coffee at lower temperature doesn't just have a benefit of not burning yourself, but it significantly benefits the flavor. It's a lot easier for a human to taste things that aren't too hot, when the coffee is very hot, it won't taste like anything.

  13. First, let me say I am a fan of the overarching message of your channel and the cooking and culture videos you create here on YouTube, but I really do have an issue with you lumping Australia in with America when it comes to coffee, in fact I really seriously do have an issue with it, you yourself should be very aware of how rapidly the coffee culture in Australia advanced forward since the 1990's and how it now even rivals the juggernauts of Europe on the world stage having lived here for a long time now, even in Sydney where the pacing is generally faster for more people than down here in Newcastle where I am.

    I'm a barista myself since 2013, it's not the coffee itself that degrades from the heat but rather it's the milk, if milk reaches over 80 degrees Celsius it will curdle and begin to resemble burnt custard which is what is flavouring your coffee and ruining the taste and experience, not the vessel it is served in.

    The only way I can see a paper cup affecting the taste of the coffee is if the cup begins to start breaking down from extended periods of time having the liquid substance sitting within it (you can witness a sort of 'soft' breakdown by rinsing a used takeout paper cup with warm or hot water multiple times, the cup will start to soften up from having rapidly heated up along with excess steam permeating from it) and it penetrates in to the paper, at this point your coffee would have already gone cold anyway and you won't be drinking it anymore.

    The paper takeout cups are designed to insulate your hand from heat so you don't burn it (much safer than picking up a heated coffee cup like you mentioned yourself using one time), some people simply just do not have the time each day to sit down to enjoy a nice hot cup of coffee before going to work or during their work day; my mother is a good example of this being a doctor and not having the time to take a proper lunch break to have a cup of coffee, should she have to miss out on the pick me up of a coffee because the experience is lost by getting one in a takeaway cup she can drink while working in between seeing patients and being more tired throughout the rest of the day? I promise you, the both of us understand the joy of coffee culture, she's also a trained barista like I am.

    Food and drink sadly can't always be a matter of choosing to engage or not engage in the experience and that's where takeout culture is advantageous, it shouldn't replace the experience but it has its benefits that shouldn't be downplayed just because some of the world's cultures have personal disagreements with it regardless of the validity to their arguments.

  14. for the kids ok, but my soffritto needs to be finely diced. sometimes i even make the onions chonky, like in my tuna pasta, because i love onions.. it depends. i like the occasional piece of veggie in my sauce. definitely blending helps with picky eaters. a friend of mine is a tragedy in that regard, dang it, a grown up man that still doesn't eat vegetables and i tell you what, he makes carbonara frittata, super overcooked, because he says otherwise it's slimy. i'm not religious but i start to name all the saints when he comes for dinner🤣🤣
    on the other end he's very easy to please, give him pizza margherita or chicken nuggets… or even a ham and cheese sandwich… sorted haha!

  15. that kind of coffee is work coffee, you need to wake up, you need it quick, and it's super hot because you'll still be drinking it 1 hour later hoping that your 4hs of sleep don't fall on you. coffee culture my arrrrrrs* that's caffeine injection. i do it too, don't get me wrong. but my first coffee in the morning is a proper one made with my 12 ys old moka and i wake up at 6 am just to sit down and drink it properly. i fail to do that and i'm gonna be a proper A-hole all day, my morning is ruined.😆

Your videos make me long for the days before I was a vegan, and could use cheese to enhance my pasta dishes. Tonight, I made a tofu ricotta to help fill a lasagna. Even though it came out really good…..I wouldn’t try to pass it off to an Italian as anything other than a science experiment 😂

I will add my own two cents here – We should always be encouraging each other to enjoy good food from around the world and expand our horizons, and if that means altering traditional recipes based on availibility, necessity or taste by all means go ahead – but when taking money from other people DO NOT use the authentic name of the dish unless the dish is authentic!
    And this goes for every culture
