Easy Stuffed Green Peppers
Ingredients:
26-28 oz of good marinara
4 medium green peppers
Pepper
1 pound ground beef
1 small onion
1-2 cloves garlic
2 cups of cooked rice
8-12 oz mozzarella cheese (fresh or shredded)
Preheat oven to 375°
Spray a 9×13″ casserole dish w/ oil
Cook one pound of ground meat w/ 1 small chopped onion and 1-2 cloves of garlic. Drain off excess oil after thoroughly cooked.
While the meat is cooking, clean and halve 4 medium green peppers. Remove the seeds. Put the pepper halves into a large glass bowl and cover with water, then microwave for 8 minutes. Allow the water to cool down before transferring the peppers onto a clean kitchen towel to drain/dry.
Prepare white rice as preferred.
Place the peppers cut side down in the casserole dish, drizzle with a 1/3 of the marinara sauce. Flip the peppers cut side up now and season with pepper.
Pack each pepper with the following layers:
Mozzarella
Meat mixture
Rice
Marinara sauce
More mozzarella
Pack any extra meat, rice, or cheese around the peppers and then pour the remaining sauce throughout. Cover w/ foil and bake for 25 mins, then uncover and continue baking for another 10-15 mins until the top is bubbling and golden brown.
