
Ingredients
* bucatini
* burrata
* Acorn or Delecata squash
* asparagus
* grape tomatoes
* olive oil
* cooked crumbled Italian sausage (only because I had a small bit leftover)
* salt, pepper, garlic powder, onion powder, parsley, grated Parmesan
To cook:
* peel and dice squash
* cut asparagus into thirds or fourths
* mix squash, asparagus, tomatoes, sausage, olive oil, salt, pepper, onion powder, garlic powder in a large glass baking dish
* bake at 425F uncovered, tossing every 8-10 minutes for 20-25 min
* cook bucatini
* with 5 minutes to go, place burrata in warm (not hot) water.
* when the veggies are done, pull them out and place the burrata in the dish and pile the veggies on top to help it melt
* drain pasta, save a little pasta water
* put the pasta in the baking dish with everything else, add in a little pasta water and a tad more olive oil, mix it well (tongs work best).
