    I watched some of your other videos, and you do something a lot of people don’t consider: combining the undercooked pasta with the sauce, adding pasta water, and letting it finish cooking in the sauce. Subscribed!

    You pour the tomatoes over the guanciale in the pan. What’s the reason for removing it from the pan prior to this?
