  3. Way too much olive oil. It would be just as good with only a couple if tablespoons of EVOO. Don't soak your heart in oil for heaven's sake.

  6. I've just cooked this, following the recipe pretty much to the letter.
    Olive Oil and garlic yum! You can't beat it!😋😋
    My flat smelled like the day I first got off a plane in Spain, many decades ago.
    This is a lovely dish. Like all "new" dishes, I was unsure whether it would taste any good, but I needn't have worried, it was beautifully "subtle."
    I served mine with boiled white rice 😱😈
    However, I plan to eat the leftovers, following one of the suggestions here with some sourdough bread, or maybe some garlic flatbread.
    And, I'm sure, that after a day, or two, it'll taste even better.
    Maybe a glass of Red Wine too! 🍷🍷

  8. Dill is a rather unusual but great spice, combined with the flavourful fennel sounds good, however I could imagine two, three handful of young spinach, Swiss chard, kale… would add more goodness to this flavoursome veggie stew.

  9. I've made this twice now and the 2nd time was even better and even cheaper.
    I already had the Olive Oil, tomato paste, bay leaf and garlic in the larder, so all I needed was the fresh veg.
    I even bought a little jar of dried Dill. Yes, I "cheated," and didn't notice the difference and to be honest, I can get 10 attempts of this wonderful dish out of a jar of Dill, while buying fresh Dill at 70p per bag, I would've saved £7 overall.
    So, the rest of the ingredients cost me less than £5 and I got 3 decent sized portions out of it, including one for the freezer.
    Not only is this my favourite vegan dish, so far, it's really bloody cheap to make! 😉👍

  10. Great recipe! I feel sorry for the no oil vegans that skip the olive oil out of fear. So glad I don't do that anymore. Some plant based doctors preach that all oil/fat of any kind will make you fat and give you clogged arteries. It pays to do your own research.

  11. Made this last night. Turned out great. No other spices needed. It’s going on my regular list. Only used 1 tbl of olive oil.
