  3. Hot tip – mix a bit of your base sauce with your noodles, just enough to coat. Then plate as usual. It will really enhance flavor and keep from sticky / gummy noodles but allow for your sauce to really stick to your pasta. When you do EVOO or OO it actually acts as a barrier between your noodles and sauce and prevents the pasta from absorbing what looks like incredible flavor.

    Also, looks amazing.

  4. I would have kept the mozzarella as an appetizer, and served the pasta only with the sauce (no bread)
