Years ago, I bought ricotta cheese for a recipe, and forgot to use it 😑. So I had a 24oz tub of ricotta in my fridge. What to do, what to do 🤔? I made lemon ricotta cookies. OMG , they were wonderful. First time ever making them. I made the glaze, but there were so many cookies that the glaze ran out, so I just dusted the rest with powdered sugar. Folks were putting them in their mouths whole!

I literally stood next to the lady that brought these cookie to our cookie swap and ate them. After everyone had chosen them I actually ran my finger across the bottom of the pan to collect all the leftover glaze! So delicious! a little bit of heaven.
