

Squid Ink Tagliatelle
Ingredients:
-1 heaping cup of 00 flour
-2 eggs 🥚🥚
-drizze of olive oil
-sprinkle of salt
-1 sachet of squid ink 🦑
Directions:
-mix all the ingredients together with a fork, then knead by hand until the consistency is right
-let rest for about 30 mins in a covered bowl/container
-cut dough ball in half or in quarters to make it easier to work with, then feed into pasta maker
Butternut Squash Sauce:
Ingredients:
-butternut squash
-olive oil
-various spices: red pepper, black pepper, thyme, cinnamon, salt
-maple syrup (I used the zero-sugar kind)
-tomato paste
-regular milk or nut milk (I used oat milk)
Directions:
-spread squash chunks on a baking sheet
-drizzle with spices, olive oil, and maple syrup
-roast in oven on 350-ish until the edges begin to slightly brown
-dump everything from the baking sheet into a blender and blend until smooth
-heat in pan and add milk to create a more sauce-like consistency
-salt to taste
Plate the tagliatelle, add a couple of heaping dollops of sauce on top, season with pecorino!
