Homemade Ravoli 3-ways

Making your own pasta is definitely harder than just
using store bought but it feels very rewarding to so!
The 3 fillings used here were Pumpkin and ricotta, pear
& Gorgonzola and Goat cheese with caramelized onion
& nuts!
For the pasta: Mix 100g of flour with 1 egg per person until it’s just right. Use a pasta maker for perfectly thin pasta sheets. Tip: Start from the thicker setting and work your way down to level ~3.
For the fillings, we went with 3 perfect combos:
🎃Pumpkin and ricotta
🍐Pear and gorgonzola
🧅Goat cheese with caramelized onion and nuts
Then all you have to do is wrap it all up like a pro: Lay out a pasta sheet, add your filling, and wet the edges. Use a ravioli cutter to create perfectly shaped & sized parcels. Get ready to enjoy!
