Minestra Modo Mio ( Minestra my way)

1/2 an onion chopped
2 stalks chopped celery
3 cups chopped cabbage
1 15 oz can diced tomatoes
3-4 cloves garlic chopped
2-3 carrots slices
2 potatoes cubed
1 tsp honey (optional)
salt, pepper and thyme to taste
6 cups chicken broth

Heat up 3 TBSP olive oil in a pot over medium heat and add onion and celery. Cook for about 5 minutes. Add in everything else and simmer gently for about 30-40 minutes. Serve with parmesan, pecorino Romano cheese or grana Padano

  3. I make a big batch of my MIL minestrone soup every few months, year-round. Her soup, a beautiful loaf of bread & some red wine doesn't get any better or more satisfying.

  5. Hi Lisa, my Pop (Mom's Dad) was born in Naples and he and his parents migrated to NY when he was just a baby back in 1896. My Nana (Mom's mother) was also Italian, from Northern Italy. I promised myself that I would ask you a question the next time you posted a food video. Nana used to make a zucchini soup that we all loved. The recipe has been passed down, but along the way the pronunciation has gotten skewed. I'm going to spell it phonetically, and hopefully you'll be able to clear it up for me. It's 3 syllables, the 1st syllable sounds like "gook" (rhymes with took or look). The 2nd syllable is "uh" and the 3rd syllable is zeel (rhymes with peel or feel). The ingredients are zucchini squash, onion, garlic, red or green peppers, whole tomatoes, potatoes, basil, oregano, salt, scrambled eggs (which are added at the end immediately before serving), and topped with parmesan cheese. Do you have any idea what this might be? Thanks for any help you can provide. By the way, I love your videos!! 😊
