I use the italian atlas 150 pastamaker machine for pasta making. The problem is my spaghetti is sticked together whenever I make it. Even though I follow the instructions for dough makin (500gr flour + 5 eggs)

Fettuccine comes out right no such issue.

    Either the dough is not rested long enough or requires more kneading.

    It looks a little wet to me too. For spaghetti, I definitely let the sheet dry a little bit before using the rollers and definitely toss a bit of flour on it before putting it in the rollers too.

    The ingredients aren’t full incorporated yet.

    It needs to be kneaded more. At least 10 minutes then wrapped up in plastic wrap and let sit for 30iah minutes. The dough should look completely homogeneous before you roll it out.

    Maybe mix the dough longer and/or add a bit more flour? When I mix mine, I use a stand mixer and go for about eight minutes.

    Maybe your eggs are bigger than usual? Could be a possibility that it is adding extra hydration to the dough. I had the same problem and instead of using 5 eggs I used 4 eggs and 1 yolk, things turned out much easier for me.

    If too moist, just add Parmesan and seasonings. If too dry, add olive ๐Ÿซ’ oil and a drizzle of white wine๐Ÿฅ‚ Flour will also help the noodles from sticking together …
