
Ingredients:
– Pancetta or Guanciale
– Spaghetti (1 box)
– 2 Eggs (or just the egg yolk)
– Freshly Grated Parmesan (~1/2 cup)
– Salt (1 tablespoon)
– Freshly Cracked Pepper (looooots)
Instructions:
– Cook pancetta in medium-low heat pan until fat is rendered (~8-10 mins)
– Mix eggs and parmesan in separate mixing bowl and add fresh pepper
– Boil water in pot, add salt, then pasta
– IMPORTANT: Turn off pan, add Al-dente pasta to pan, wait until it cools a bit (~2-3 mins).
– Add egg and cheese mixture to pan and stir.
– Add pasta water a ladle at a time until desired consistency is reached.
– Serve with black better
