    cream in pasta is not such a big no no, in Italy, but chicken in pasta is universally reviled there. That said, thank you for pointing out that the traditional techniques and ingredients make a difference in flavour!

    Nooo what the heck 😂 never do it in one pot, you have to cook pasta separately because of it's starch…. Water always gets 'dirty'

    Tradition is a lie. There are always going to be purists and gatekeepers who arbitrarily label things as inauthentic.

    Lest we forget, pasta originated in China; garlic originated in Persia; tomatoes likely originated in South America.

    The creamy one looks great, But as I'm from the UK and a normal sized human will be using crème fraiche which is lighter than your horrible American full fat cream that you all seem to enjoy over there along with other foods that should be banned

    I'm not sure which would upset Italians more. The first two or the "traditional Carbonara" that had fried garlic, a weird egg, cheese technique and lacked the carbon from which it gets its name i.e. pepper.

    I’ve made the first one a lot, I’ve made a few tweaks to the recipe to make the dish better in my opinion, but for me, the first one is a healthy options for me to eat, but don’t get me wrong love to try #2 and i love me some good carbonara…. That’s not from Olive Garden

    The hardest part of cooking pasta for my mom is she hates el dente and likes it overdone. I know cooking for others is about what they prefer, but it still physically hurts to let it get mushy like that
