This is kind of a abomination dish for a quick lunch, first time I’ve ever tried trofie, it pairs well with my homemade pesto sauce, which is a mixture of Thai Basil, Garlic, Cashew Nuts and Olive Oil marinated for a few days ( I live in Asia and just have fresh Thai basil in my fridge), the whitebaits are fresh from the market, I just saute it in olive oil for a short time and combine with the pesto to add savouriness and fishy flavour to the dish, kind of like what a canned anchovies would do. Finally I topped it with some Parmigiano, overall the dish turns out to be pretty tasty !
