Undercooked guanciale and hardly any sauce, which looks too cooked as well.

Hi! I love italian-foods. My favourite is the salmon-carbonara with sun-dried olives 🤤. Other good ones: chicago style pizza with döner topping and ofcourse creme brulee. I know, i know, every child knows those classics. Thats why i thought to ask: any less-known dishes to share with me, so i can try them out? And a second question: if i make lasagne, can i just skip the bechamel and use yoghurt or buttermilk instead? In my opinion they look same. Just add some salt, pepper and nutmeg…and maybe some oyster sauce to boost up the umami. Thanks guys!
